Great video. Did I hear correctly that you fermented in a keg and then carbonated and served from the keg/fermenter? I’m asking because I’m also keg fermenting a Brett beer right now and trying to figure out the best method to carbonate without “infecting” my kegerator. My plan was to just use an old picnic tap but curious to hear how you did it. Thanks!

I ferment in kegs and then transfer via CO2 to a new keg post a cold crash. I have to move kegs around often and I don't want to risk stirring up sediment each time I move it. Cheers! -Mike

Nice job Mike. As a Belgian beer guy does the Brett share any characteristics of an Orval in your opinion?

Not in this application. Orval always seems drier and maybe a bit of a black pepper like spice note. Here it was more leather border line cherry (fruit) wood like. Cheers! -Mike
