Interestingly enough, I tried using an image to track someone's IP, but it doesn't work because Discord is smart. What they do is instead of sending the request for the image from your client, leaking your IP, they send it from their servers. Although if you embed an image on a website and then get someone to open it, you can track their IP (but at that point you don't need an image lol).
