I always forget how nougat is different from marshmallow fluff. This explained it in a simple way that I may actually remember this time! Now, if I can learn (and remember) how divinity is different, I have my meringue candies figured out.

if you have trouble, remember that nougat is soft but not sticky when hardened, its tacky instead! often times, candy makers add a bit of cocoa powder to nougat, too…

Before corn syrup was concocted everyone just heated sugar and water to make a simple syrup, so in essence this is how nougat could be made. He's just using corn sugar and not cane sugar​. @@Toykio

Today I learned that „Nougat“ is something totally different in different parts of the world. In Germany the main ingrediant in Nougat is Nuts. It‘s basically like peanut butter, only more firm and with hazelnuts or almonds in most cases.

Ya in the UK thats what it is too, but you don't see it much, and in chocolate bars it's like what's he's making in the video. So I guess we have both. Especially this odd white and pink on I've only ever seen at the seaside.

@@tymothyyoung1530 we have a white one too, but I think it‘s made differently. Not sure though. I think we call it Turkish Nougat and it has nuts in it too… but whole nuts. In chocolate we have the brown nougat made of almonds/ hazelnuts.

@nitka711 ya I know there are some other colours, I just have never bought any when at the seaside, so for me its just more the pink and white one that stick in my mind. Not my sort of thing, stopping at the stalls/shops that sell a lot of seaside rock, never been a big fan of rock. And that's where I mist remember seeing the nougat, and I just more remember the punk and white more then others.

For all those youngsters that want to try this, always wear protection like kitchen gloves, apron, and longsleves shirt, and always ask an adult supervision. That boiling hot sugar is basically lava and will cause severe injury if something wrong happens, especially during the pouring part and cream adding part in the caramel. The guy in the video knows what he's doing. Stay safe always

Thank you for pointing that out! Boiling sugar is so much hotter than boiling water, and while boiling water can seriously injure you, if you just get some splashed on you you can stop the burn by thinking quickly and running cold water over it. Boiling sugar? You don't want to even have to try to solve that problem.

A few ideas for your next video! Not sure if some have already been done… - how does opening the oven door during cooking time affect the end product? - end result from using butter vs oil - does texture change when using different oils in cake? (veg, canola, coconut, olive oil) - how does the amount of moisture in a batter affect the end result? Genuinely curious for all of these! 😍

To add onto the different oils in cake, I've heard it's possible to replace up to half of the fat/oils in a cake batter with applesauce without affecting the cake. Would be neat to test that out.

​@jdubbs6668 you can use all kinds of things. Mayo, applesauce, bananas. Basically anything that has a creamy texture that is also a little starchy or oily is going to work

@randomness051 I'm sorry if I used the wrong term, but I have always known it as honeycomb. Not the wax cells full of honey made by bees, but a candy made by melting sugar and boiling is till it's golden, and then you carefully add a spoon of bicarbonate of soda into it. That makes foam, and then you pour it onto a greased tray to cool.

There's also sweetened peanut butter. Mix equal parts sugar and creamy peanut butter until the sugar has fully broken down and there's no grittiness. This should also help to aerate the mix, making it lighter and easier to spread. If it isn't light enough, turn up the mixer's speed and let it get some more air.

Nougat is NOT whatever you made there. By definition, nougat contains some form of nuts - usually ground to a fine paste. What candy manufacturers sell as nougat and what you seem to have believed from their marketing, has very little to do with actual nougat.

Homemade nougat is sooooo good! Seriously you can just make the nougat and use it like marshmallow fluff

I make chocolate bars in the past with similar ingredients. You definitely need an emulsifier to thicken and garden it. But it can be made with sugar free ingredients too.
