Benjie, chinese style sausage is a staple in filipino dishes. You are right it can be put in pancit. You can also put it for cooking fried rice.

Since the old plantation days in Hawaii a lot of Japanese, Chinese, Korean, and Portuguese immigrants came to work on the farms. Since then, brining there influence of food to Hawaii changed the local food ways. The biggest by far is Japanese influence, that’s where Hawaii gets the melting pot of rice in plate lunches, poke bowls with sushi rice…the list goes on. Not to get it mixed with Hawaiian food (that’s its own category) but what we call “local Food” is mostly Asian inspired. So our stores always have Asian foods.

That Chinese Sausage is used a lot in Vietnamese cooking. We use it in a rice dish we called Soy. We also use it in steamed buns that we call Bun Bao. Benji you really need to try more Vietnamese dishes. Not just Pho.
