Bennett Cocktail Recipe Cocktails After Dark
Today we take 'Cocktails After dark' in a new direction focussing on cocktails from our collection of historical cocktail books - prohibition and earlier. Today we start with a Bennett cocktail from the 1930 printing of 'Cocktails by Jimmy Late of Ciro's London'.
Ingredients:
2 parts Old Tom Gin
1 part lime juice
2 dashes Angostura bitters
Method:
The book itself gives no method for making or suggestions about serving - this was left up to the person making it.
We chose to shake and then strain into a Nick and Nora.

Really like your cocktails after dark series. Was a bartender for 40 plus years and as such you always modify the drink to the customer if asked. Love the old cocktail recipes.

Thrilled about this new series! My husband and I are Prohibition-era cocktail obsessives (well, within reason, obviously). There's something magical about mixing up a Sidecar or a Jack Rose or a King's Jubilee in an antique 1930s shaker and straining it into a Nick and Nora glass.

It's just a guess, but I think that the drink is sarcastically named after R.B.Bennett, who was Prime Minister of Canada from 1930-1935. Gin was often thought of as a "poor man's" drink, and many Canadians blamed the great depression on Bennett. It was a common joke, to name something that was symbolic of poverty after him (eg. Bennett buggy= a car with no engine or gas to run it). If this guess is accurate, that would make this drink a novel part of Canadian history. Thanks Glenn and Jules!

Since most (if not all) cocktails were developed by trial and error anyway, it makes sense that there is a lot of variability and personal preference involved. I like the humility aspect here.

That last part from the book was hilarious! My mom is always telling me stories about mixing drinks for her parents in the 70s when she was a kid, it was truly a weird time.

Cocktails must be made only one way so they can be costed in commercial environments and remain consistent. Takes all the art out of it which Glenn fortunately acknowledges.

As you point out, this is a different day; a bit less about 'hospitality' at the bar. There is a place for 'consistency', even with many regular customers who have learned to cherish a specific ''make". I am of another kind, once in a while: I like the personal approach and the individual touch. I appreciate the 'journey' a good barman can offer through his work.

Agree 100%! Making cocktails is all about hospitality and catering to the customer/guest's preferences. There is no room for snobbery in the tradition of cocktail making or tending a bar.

In Europe too kids were drinking as well. In France it's only in 1956 that a law forbid school to serve wine for the kids aged 8 and above during their lunch at school .... Each kid could have a full glass of wine with their meal - maybe that also a reason why we have 2 hours lunch in France !

As a kid I'd make Dad's favourite gin and lemon for him. I'd like to think he never noticed that the glass was never quite full. Then one summer day he handed me a glass of what I thought was just lemonade and I downed it one gulp. The look on his face!

My mom and dad always told me that when I was two or three years-old I'd greet people at the door of our house and ask them " do you want me to make you a martooni?". I wish I knew if I actually made one for them. LOL. It was the late fifties and martinis were very popular. And I remember going to other people's houses with my parents, later on, and the first thing that would happen is Martini's would be served.

I'm scratching my head that some didn't get why the lights being down....anyway...Due to this "little issue" that we're experiencing, I've taken up the pre prohibtion / prohibtion cocktails and YES!! you're right...try and enjoy the recipes history and then... .experiment, substitute and have fun with it. Like clockwork my grandfather would arrive home and my grandmother would bring him a Manhattan as he slid into his armchair. If the drink was delayed my job was to remind the bartender. ;)

I love cocktail folklore and sifting through old cocktail guides. I partly came to this because my dad was a Public Relations man in San Francisco and he knew two legendary columnists, Stanton Delaplane who is credited with creating Irish Coffee, and Herb Caen who was famous for his opinions of Martinis. Hearing these stories rubbed off on me.

This has the same base ingredients as my favourite summertime drink: the Green Isaac Special - replicated from Hemingway’s “Islands In The Stream”. My version is constructed in the glass: Glass full of ice, add one measure of gin, a dash of angostura, a squeeze of lime and top with coconut water. Absolutely delicious and incredibly refreshing. The Green Isaac would work well with Old Tom as well.

The conversion of virtually everything into a "quasi science" has contributed to the pedantry, I think. It should be fun, quite right. Cheers. (I do think people should open their horizons and occasionally try things they don't like and actively try to acquire complex tastes though. Just don't be a snob about it!)

Glen, I watched the video 3 times and Jules starts with the dry gin and prefers the second gin which was Old Tom. I believe you told her it was the dry gin that she preferred.

The real talent of hospitality is customizing the experience with letting it get out of control. When the customer starts armchair bartending, the results are usually bad. Then you look like a bad bartender.

I agree for the most point, save for one cocktail. the martini. must be gin, and stirred not shaken. none of that vodka crap. you can have a vodka and vermouth drink, shaken with ice, but that's not a martini.

It's whatever amount you choose, as long as it remains consistent. It can be ml, oz, spoonfuls, cups, thimbles, buckets, etc.

I would say it would be 30mL or 1 fl. oz. as that would be the standard in North America. Maybe Glen mentions it in an earlier video?

The ratio is one to one-half to 2 drops (a drop equals 1/20 of a ml). So one liter of gin to 500 ml of lime juice to 3.33 ml of bitters. Or 1 drop of bitters to 7.5 ml of lime juice to 15 ml of gin. The ratio stays the same either way you go.

I tend to just pick one of the sides of my jigger and make that the base “part”. Depending on the overall size of the drink and the number of ingredients, it may be the small or the big side. Prior to buying the jigger I used a shot glass instead to at least keep my sizing consistent (none of this “one finger thickness” nonsense), but that didn’t provide easy ratios in the same way.

There is a restaurant/bar here in Las Vegas that has your "customer is always right" philosophy regarding drinks. It's called Herb& Rye. Their drink menu goes from the early 1800s to present day. If interested checkout their web site at herbsandrye.com. Also their food is also amazing.

You can capture wild yeast! It won’t ferment as quickly but can yield some unique flavours. There’s lots of videos about making beers with wild yeast, but the first one which comes to my mind is How To Make Everything’s episode about the history of beer.

@@2QAceBrosef it’s part of the cocktail shaker, many use the glass tumbler instead of just putting a lid on. It allows for the ice and fluids to go on a longer journey with each shake. Your mixer either comes with the strainer lid, or with a tumbler and separate strainer, it’s rare to buy one that comes with both (although not impossible). It’s not strictly necessary to use one kind or the other, it’s just personal preference.

I enjoy and appreciate these "cocktails" videos and I understand your trying to set the "scene" so to speak with the dim lighting. But the fact that I get them at 10:00 CST kind of defeats the purpose...LOL! Plus being dark AF is really annoying. Sorry for the grumbling...I appreciate what you do!
