I now actually only put a few potatoes in the coddle to thicken it and do a seperate pot of potatoes with a bit of salt in them about half an hour after putting the coddle on, I find the coddle is tastier that way, but either way, I hope you enjoy. Thanks for the comment.

Instead of oxtail I use potato and leek soup I'd definitely recommend it

I wouldn't be using a pepper I do use celery and Carrots close to mine
