This video says that the South Dublin Coddle is not the same as the North Dublin Coddle. The North Dublin Coddle looks like potato stew with some meat in it (much like what you showed for the Irish version) while the South Dublin Coddle is said to be brown. I assume that the meats are browned before adding the potatoes and water or stock. The contemporary Irish coddle (not cuddle) looks very like what you made. The ugly version you showed is only on the table of the very poor or young single males who can't cook. There is an on going debate about browning or not browning the sausages. I am on the side of those who fry the sausage first. But I'm Canadian, whadda I know? I like this channel and the name. I get into a bit of cast iron craziness myself. I inherited my grandmother's cast iron, including the eight quart dutch oven. You do some great food porno. I am addicted to food porno and my wife approves. I'm the cook. Food porn keeps me experimenting with cooking.

As an Irish guy that loves coddle. You don't brown the meat. The Irish thing is, do you peal the skin off the sausages of not. Some do, some don't. I think potato soup works the best. When done right it's amazing. When done wrong, not so good. I'm gonna try this browning the meat tho, sound interesting. If you make traditionalish coddle don't be afraid to throw all sorts of vegetables in.

ZiiRaZoRiiZ Oh yes, the veggies are important. Also, this is the time of year when I make potato soup and sweet potato pie. Browning the meat is just a habit for me, when using beef or sausages.

The traditional Irish coddle is exactly the way its supposed to taste! Wtf is browning? Coddle should be sausages, bacon, onions and potatoes simmering in a big pot of water and pepper to season! It is absolutely delicious! Anything else is not coddle. There's no such thing as northside coddle and southside coddle there's only 1 pure coddle. Parsley is optional, and carrots are not pure coddle but its not uncommon for people to include them in Dublin.

I wont speak for others on traditional VS reimagined I will say when some one says remake / traditional I don't care whether its a song , a beer or a recipe if its a remake /traditional it needs to be exactly as original was HOW EVER if one says my way or in the style of or simply not traditional then All is good hears the sticky in the wicket I almost never care for the latter and usually like the original but I stress USUALY not always

Your out of focus,blurry depiction of coddle was a bit OTT! I make this from scratch in 30 minutes. Prepare, cook and serve and it does not look in any way unappetising. Brown the sausages if you must but that personal choice. The cooking time is important as fuel,gas and electric can be expensive. Change does not equal improvement.
