Apparently they had started incorporating a new lighting rig that was incredibly heavy and just wanted assurance that the people setting it up at a venue were paying attention to the details of everything. This was right when bands first started making and bringing their own massive lighting and effects rigs for their shows, so it was a pretty new thing for venues to deal with, and if one of those big trusses fell and hit someone right, it could easily kill them. If they ended up getting a bowl of every m&m color they knew that the crew might be half-assing other stuff. At least, that’s what David Lee Roth said about it in an interview.

33:20 This one is actually true, according to what I've read, and the reason they did it is actually pretty commendable. Van Halen would request a bowl of M&M's with all the brown ones removed, as an indicator of whether or not those running the venue actually read the full contract. They took massive lights (and obviously a lot of other tech) on the road with them, and the specific requirements for the stage setup were detailed in that contract. If the road crew showed up to a bowl of M&M's, and the brown ones hadn't been removed, it was a pretty good indicator that there would be problems. Wasn't just a matter of technical issues though, it was also a safety issue- their lights presented a pretty big fire hazard to older venues ill-equipped to host them. If it weren't for their attention to these details, they very likely could have been responsible for something like the fire at The Station in 2003.
