Green Godess is a dressing invented at the Palace Hotel in San Francisco in 1923. Parsley, herbs, anchovies, mayo, garlic, lemon juice, etc. The 'original' recipe seems to have varied over the years.

Its been slow cooked and the way its cut is through the bone. so you are seeing the cross section of the bone. Its also cooked to perfect temp from what it looks like so it may seem raw but it isnt.

I was at Las Vegas two weeks ago for a fashion convention for work and it was all work and no play, no gambling and no buffet, my most lamest Vegas trip ever... I did not know about the secret Lunar NY buffet, I'll remember it for the next year haha. No time limit? I'm in next year, Feb 10, but that also lines up with the Superbowl. Cost probably near $100? Belagio (Jasmine) and Wynn (Wing Lei) I know have Lunar New Year specific buffets.
