As one of the "critics" from the last video, I appreciate the new flexibility, and it certainly looks like they are trying to be more accommodating. However, one alternative red pepper salsa won't cut it. Please make a mild(er) tomato salsa and a fresh tomatillo salsa and let people choose between them. Better yet, set up a salsa bar and let people take whichever one they want. And yes, those are common in authentic places. However, I still won't be getting the choriqueso unless and until and unless they drain the fat from the chorizo before mixing it with the cheese. I am not getting needless heartburn just because the place wants to be "authentic." On balance though, this place sounds like a winner and will be on my list of places to try next time I am in town.
