Hello Hawaiian lady. I just want to say you are amazing. And I thank you for passing on your knowledge . I’ve been cooking internationally for 25 years now. My most favorite kitchen was the four years I worked in Montreal at a south East Asian restaurant called “ Satay Brothers “ . My chefs mother aka mamma Kim was Singaporean and all the recipes and techniques were learned from her. I had the honor of knowing her before she passed away. You very much remind me of her and your suggested techniques . You are a true “hawker” , I’m glad I found you .

Hi Leonora, I am so happy I found your You Tube channel! I grew up eating at Cantonese American style restaurants. It is hard to find this style of food ( on the mainland) now days, so I try to replicate my favorite dishes. I think you are the answer! I also love pickles, so I am looking forward to trying your pickling recipes. My niece is a big fan of takuan, so I think I’ll try that recipe first. It is so good. You can really lose weight too by drinking this and you don't feel hungry. Besides it has so many health benefits. I just made my 2nd pot last night.

It doesn't gelatinize because you don't have enough bones where the cartilage and tendons release collagen and protein. Any kind of bones work.

Hello H.P.L. and friends. I love my Insta-pot! Total game changer. My good friend and his wife received one as a gift , three years ago on their wedding. They found it a nuisance, just kept relocating it, in the unopened box from place to place. Well, we do each other favors all the time , with a “no thanks required” tribal code of conduct ,as friends do . Lol, one day as a joke I said, “ I hate to see you burdened with such space consuming items. How can I help?” They gladly offered it to me and in return I bring them a generous portion of whatever’s cookin in the pot . I was always intimidated with Pho soup recipes but not anymore. Every Sunday , I’ll make make my chicken stock on the stove top ( low roll for about 3 hours) , my ghee and start curing and marinating, the weeks meals. I keep all the mirapoix separate from bones , on Monday I make a remouillage in the pressure cooker. It breaks those bones down just perfect . It really is awesome . Rice and risotto come out perfect every time and braising cook times are basically cut in half .

Hello from NYC! We just discovered your channel and absolutely love you. My husband and I, both retired, have binge watched your channel for the past few days. Your recipes are wonderful. Here in NYC, we have access to every ingredient. My husband is Filipino and does 90% of the cooking. We have 2 requests if you could... years ago we frequented a Chinese resto and made friends with the owners. The chefs allowed us to eat food they prepared for themselves and cannot find anywhere else. They have since closed. Can you please show us how to make Winter melon soup and also Lotus root soup with dried bean curd sticks? Thank you. We look forward to your posts. 😊

Sorry, it's dried bean curd but that's not a problem. Both of these I call long cooking soup and I cook it for 3 hours. Short cooking soups take about half hour like cabbage and softer squash.

So tasty but you need a lot of containers to freeze if not using it. It can be used with everything, soups, sauces, etc.

Hi Thank you for the recipe. Do you boiled all of the bone first before oven it? Or you just put it in the oven when the meat still raw? I normally boiled the dirty blood water out first and use a new batch of water when i make a soup or stock, Thanks

I just boil but your idea is good. I always remove the scum and if I rinse out the bones, I also scrub the pot.

I always wanted to know how to make bone soup. In Japanese cooking, like Chinese both use bones . Raimein soup base foundation is the bones. My mom use to use neck and giblets for making gravy or soup. I like using the whole carcass And wings . Many use pork bones here. When doing pork bones how does it differ ?

Bone broth is different from stock for regular soup with veggies and for noodle soup. Bone broth cooks for many hours and you only want the broth to get out all the collagen and protein from the bones. Stock is cooked anywhere from 1-3 hours depending what you're making.
