What did you do with all the artichoke leaves? I love eating those too! Did you just cook them up on their own? I always do it while the artichoke is whole. And where did all that artichoke fuzzy stuff go? You didn’t seem to have any.

Hi Zoe - I used smaller spring artichokes which are increidbly popular in Spain and the Mediterranean during springtime, not globe ones that you are probably more familiar with so there are two differences…no fuzzy stuff in the heart and no leaves with meat on the edges. Hope this answers a very good and really logical question! Knowing that globe artichokes are probably much more well-known in the US, I should have mentioned these differences. I think that you should mention NOT to throw away the outside leaves of the artichokes; boil them and serve with a lemon butter sauce (you have to pull them through your teeth for the 'meat', then the left overs can be discarded--or used in a vegetable soup boullion (at some point they will need to be thrown away)...dts/usa

HI Dana - I have never tried cooking the petals from baby artichokes but anything’s worth testing and it’s still spring artichokes season here so I’ll give it a try. I always did that with globe artichokes because there is meat in the base of the leaves. Thanks for the idea. I’ll give it a go next week. And whatever we have in organic matter, it all goes back to the mulch pile and back into the garden, so no waste! Cheers, Caroline
