Hi there, I have just bought a Lodge Dutch Oven, and this is the first time that I have cooked a chicken. I followed your recipe and it turned out just fantastic! I don't have a spice blender so I used my mortar and pestle to grind the pepper corns, and a chefs knife to cut up the Rosmary. I added potatoes part way, and ended up eating the carrots and onions. Hi Chef - wanted to ask a question about the round vs oval dutch oven. I plan on using my dutch oven both in the oven for larger roasting chickens and also on my stove top as well. I’m concerned if I purchase the oval it will not heat evenly on my round burner on the stovetop. Have you used an oval on the stovetop and is so were there any issues? Thanks

Hi Kate! No I have not used an oval on the stovetop. If you did I dont think that would be a problem because the cast iron is heavy and the heat would radiate out. There would be, I,m sure, "cool spots", on the ends but if you stir the contents occasionally there would be no problems.

Hi! I,m sorry that I did not respond quicker. I was so involved in my latest cooking video that I will post later- Glazed Cornish Hen with Fenell and Oranges. Anyway. The shears are Wustoff, very expensive but worth it. The grinder is Cuisinart. Pardon my "French". I usually buy from William Sonamar or Sur La Table. Thx for watching.

What size Dutch oven did you use here? I’m trying to decide between purchasing a 5.5 or 7 quart dutch.

Go for 7. That size will give you the option to cook a fairly large chicken. And I prefer the oval shape to the round because it’s not as bulky and fits well in the cabinets!

Thank you for making this video! I have been wondering if the 24 cm Staub is big enough to roast a whole chicken. If I heard you correctly, the size of your bird was 4.25 lb, is that right?

I own 3 Staub ECI round pots. The 24 cm, 26 cm and 28 cm. I would say the 26 cm and 28 cm round ECI pot is better suited for larger chicken. The 24 cm is perfect for a smaller chicken. I also own two Le Creuset oval ECI pots and they are perfect for poultry too. Cheers, Claus

Thanks for your video :-) Just a FYI. This is NOT a non stick coating on the Staub cocotte. This is the dark enamel porcelain coating you find on all Staub cast iron pans & pots. Cheers, Claus

Maybe heat the cast iron for 30 minutes before cook it. That would speed up the cooking of the bird.

I wouldn't have put the chicken on top of the vegetables like that I don't think it's the greatest having the chicken touch the top of the lid.

I think most people like onions. Maybe thats why every burger joint uses them! Roasted onions are actually very sweet compared to raw onion. Thx for the comment.
