I think he's used to viewing things as a professional would for cooking speed. I usually add a hour or so to any quick recipe to account for not having chef skills and speed.

The only thing you need to wash is the corn. But if you just use it out of a can, then you don't. Everything else is just peeling.

@@michaelhoogendoorn3179 What’s a realistic time for you to execute this recipe? 20 min is perfectly reasonable for an experienced home cook. You just have to know how to use your pots and pans at the same time. Workload wise this ramen is similar to making mapo tofu with rice, and I can comfortably do that in 20 min.

Yeah plus the time to get the ingriedients in a (chinese) supermarket. Most of the used stuff I usually dont have at home (like ramen noodles, green onions, chicken stock, miso, handachi?, shallots, small amount of pork).

Joshua Weissman 20 Minute Ramen Ingredients * 2 shallots, finely diced * 7 cloves garlic, minced * 1 inch knob ginger, grated * 1-2 scallions, thinly sliced * 1 soft boiled egg * 1 cup butter * 1 cup corn kernels * .5 lbs ground pork * 1 tbsp cooking oil * 1 tbsp sesame oil * 1 tbsp sugar * 1 tbsp spicy chilli oil * 1/4 cup white miso paste * 1.5 qt chicken stock * 1 tbsp hondashi powder Method 1. Prep your ingredients, including soft boiling an egg by simmering for 7 minutes before submerging in ice water. 2. Place butter in a medium sauce pan set to medium heat, stirring often until butter is brown and has a nutty aroma. Add corn and a pinch of salt, and stir until evenly incorporated and hot. Set aside. 3. Place a Dutch oven over medium high heat and add cooking oil to coat the bottom. Add your pork and cook until browned, breaking it up with a potato masher as it cooks. Set pork aside. 4. Into the same Dutch oven, add cooking oil and sesame oil. Once oil is rippling, add shallots, ginger, and garlic. Sauté for two minutes. Add sugar, spicy chilli crisp, pork, and miso paste. Stir to combine. Add chicken stock and hondashi. Bring to a simmer and then set aside, keeping warm. 5. Cook ramen noodles in boiling water. Drain water. 6. To assemble: ladle a generous helping of broth into a bowl, followed by noodles. Set your remaining toppings artfully on the top. For the record, this would easily take even Josh longer than 20 minutes, if prep time is included. Aside from the relatively quick knife work, you’ve gotta wait for ingredients to cook, things to come to a simmer, etc. Looks tasty though, I’ll probably try making it sometime that I have dashi powder on hand.

Should work when you use three pots and have everything somewhat ready in the fridge. I don't think the 20 minutes is too wrong. The problem is more in getting the right ingredients beforehand. And cleaning up afterwards. I'd have to shop at least twice as long to find all that stuff. And my local supermarket certainly won't have all of them.

@@sidthesloth12 Also depends on how often you did it. 20 minutes is what it'll take once you know how to do it. First try might be 30 to 40min, but I think nearly everyone could reduce the time to 20 if they do it often enough.

@@PhillipStratton Depends on the kind of stove and pot you're using, but it usually shouldn't take more than 10 minutes if you crank up the heat to get it to a simmer. Same thing with boiling the water for the noodles, which will cook pretty fast as well, especially if they're fresh.

It may be fast, but there were definitely a lot of shortcuts done. You want a real ramen, you're gonna be braising a pork belly (or chicken thighs) for like 12-13 hours. Then you have both the toppings and the base for the broth.

Dude that looks awesome!! I make some really good ramen with shin ramen and have some suggestions. Add some black garlic (like 1/2 clove) to it, minced and melted into the broth. Add some shiitake mushrooms (dried or fresh) about 1-2 of them. Add some jalapeño powder (I prefer it to fresh or paste, it's an underrated seasoning imo) like 1/3-1 teaspoons Better than bouillon chicken (or just chicken stock) Add a bit of curry powder, msg, sesame seeds, and parsley Shit is bangin

Ok I made this but I used bacon instead cuz no other pork, and it was great! Thanks for the recipe. Pretty quick too. I probably took 30 minutes , maybe more but still very easy compared to actual ramen recipes

Hey y'all, just wanted to drop a pronunciation tip in the comments for anyone interested. 'han dashi' is pronounced 'hon dashi'. I spent 10 minutes trying to find a word in American English that has this sound but failed miserably so just google 'how pronounce "hon" in Japanese'. Sorry y'all lol. If anyone has any good suggestions though please let me know! As for what it is, it was that one dry ingredient he added after the miso. It's is a type of powdered stock made of heated bonito flakes + kelp. It makes miso soup a breeze. It just adds a lot of depth of flavor that takes it from watery to delicious.

you forgot your tare and aroma oil. also, boiling miso changes the taste a lot since it kills the bacteria so I'd refrain from doing that. A real idea for a quick ramen I'd have is to use store bought broth or make broth with just ground meat, make a simple shoyu tare with a cup of soy sauce, splashes of mirin and sake, and a spoonful of sea salt (2 tbsp of tare will act as the salt for the whole bowl of soup, so there's no such thing as too salty with this) then you can make an aroma oil with some scallions, garlic and ginger roughly chopped (pre minced garlic and ginger should work here too), put the aromatics in a small saucepan with 1/2 cup of neutral oil and stir continuously until the aromatics are almost burnt, then strain the oil into a glass container. If you don't want to do all that work for oil you can buy pre-made negi abura oil online (you can also use chili oil or any other flavored oil you want). For toppings, anything should work. I think the fastest to make would be broiled fish but that's not too cost efficient so really do whatever your heart tells you. Chashu takes a little while but it is worth it. On the topic of eggs, plain ones will work fine but if you can do some prep the day before marinated eggs really are amazing - I usually use the ramen egg recipe from just one cookbook. When you assemble the bowl, put 2 tbsp of tare and a spoonful or two of oil in, and then a little over a cup of hot soup. Strain your noodles well, add them in and lift them up and fold them over themselves a few times to create a surface for the toppings to float on. Then just add toppings!

This will take you an hour if you aren't familiar with the process. But as you get more comfortable on further attempts, you get better and faster with each step. No one becomes a competent chef overnight, just take your time and work at it. You'll get better faster than you think

I give you an A+ for the butter and ground pork. You have some Sapporo ramen vibes, but you get major points deducted for adding corn. I guess in America, you can't expect authentic 🤷‍♂️

The only way that I get ramen in 20 minutes is if I'm ordering in from a restaurant. That ^project^ he shows in this video would take me 3 hours, at least. (not counting the time that I'd need to go buy all those groceries)

My hack for cutting down the time is that you can put a whole egg in your air fryer for like 5 mins and it comes out perfectly soft boiled for ramen. So much more convenient than boiling one, especially when you're already using at least two other pots!

I've tried it. Great recipe but I skipped chicken broth, just cooked meat a little longer with veggies. Excelent 10/10. P.s. It was ready in 30 minutes

noodel 3 min egg 5 min wash, chop chop, 8 min meat 5 min cleanup 3 min can do steps together save time Use proper cookware have a good stove otherwise add another 10 min
