Many think eggless cake may taste terrible without eggs, but that's not the case... it can taste equally delicious. I read many online comments about eggless cake being dense, dry and heavy. With the use of Buttermilk and Baking Soda will give a beautiful rise to the cake and I sift the flour 3 times to introduce more air into the batter making it extra light. Also make sure to use cake flour instead of all purpose flour, it really does makes a big difference.
Here is the RECIPE
CAKE TIN: 5inch Square x 3
180g Cake Flour / Low Protein Flour
1tsp Good Quality Baking Soda
1/2tsp Salt
150g Caster Sugar
30g Cocoa Powder
240g Buttermilk
90g Canola Oil all any neutral tasting cooking oil
Ganache Recipe
100g Whipping Cream ( I use Elle Vire)
150g Dark Compound Chocolate
1. Heat whipping cream and pour onto chocolate, set aside to allow the hot whipping cream to melt the chocolate thoroughly. if there are a few pieces of chocolate left un-melted, you can microwave at 50% power for about 10 secs and stir again.
