I'm an American Ukie, and I have never seen a hot water dough preparation, which is common for Chinese noodle doughs. In my family, although the dough is not like this, we do use the Chinese donut-and-snakes method for portioning dough into pieces to roll individual wraps. This method intrigued me, and the results looked delicious, so thanks for posting. : )

I made perogies for the first time today using this recipe. They tasted delicious! I added cheese and green onion to the potatoes for the filling. I found that the dough was more elastic when I added warm water instead of hot water. Maybe it was a one time thing. They still turned out great! Thanks for the recipe! :)
