While I was releasing my Guyana travel series, a Guyanese chef named Sandy reached out to me and invited me to her home in the Florida Keys for a full Guyanese food feast! We’d be having pepperpot, egg balls, baiganee, pholourie and more in her backyard and her kitchen!
She started off by making the pholourie, which are little split pea fritters. I tried one-they were really tasty! She also had lots of peppers and had made some chayote achar, mango sauce, and a spicy pepper sauce. They were all exceållent with the pholourie!

The pholurie was crispy on the outside and soft on the inside, and the pepper sauce made my tongue numb! I loved the sweetness and chunkiness of the chayote achar, and the mango was sweet!
She also had some bhaji leaves and mixed them into the remaining pholourie batter and fried them. Then, we headed into the kitchen, where her son had made some fluffy plait bread and some moonshine, which is 60% alcohol! Sandy was also making pepperpot in there and had some El Dorado rum waiting for us!
Sandy added some fresh thyme and hot peppers into the pepperpot, and then she grabbed a fresh coconut and cut it open so I could drink the coconut water. It was so filling! Then I tried my hand at cutting one open.The meat inside was like a nice, thick jelly!
Back inside, we went with the 15-year-old aged El Dorado rum with a bit of coconut water. It’s an amazing combination and the rum is so smooth! Next was the moonshine, which was surprisingly smooth.
Next was the plait bread with pepperpot. She’d made two types of plait bread. One of them contained coconut milk and bits of hot peppers!
For the pepperpot, Sandy used oxtail, beef, goat, and pork. I could wait to dive into it! It had a bit of sweetness and tanginess, and the meat had a bit of that gelatinous feel I love. The cassareep, allspice, and cinnamon were also fantastic. It fell apart in my mouth!
Ourside, we had carambola (starfruit) preserved with rum, wine, and brandy. It was a rich, caramelized starfruit! I also peeled and tried some moringa seeds before she showed me her green seasoning. Then, we cooked a goat curry in the backyard in a 75-year-old Dutch oven pot! It makes the meat super tender!
Then, in the kitchen, we made some roti, which is also called buss up shut. Then, I tried some dragonfruit before she started building some shrimp curry and crab curry. Everything smelled amazing! The shrimp curry was phenomenal!
Finally, she began cooking the roti. I rolled one out and put it on the grill and then smashed it with my hands to make it flaky and layered. Then, we fried some egg balls and made conch pholourie, and baiganee with eggplant! Her son also made a corn pone with coconut and dragonfruit!
Then, finally, it was time to eat! The dry roast shrimp curry blew my mind, and the conch pholourie with the chayote achar was unbelievable. The goat curry was like butter and was so tender. I loved the potatoes in it! And I couldn’t get over the amazing pepperpot!
Then, I dove into the crab curry by breaking the legs and body and sucking out all the meat. It was messy and dirty but so tasty and worth all the trouble! It was my top dish of the day so far!
The egg balls contained quail eggs and was unreal with the mango souse. But the baiganee with chayote achar blew me away! Then, I tried an amazing dessert called sirnee!

Sandy is not only beautiful and entertaining but she is so knowledgeable ...gave so much info on the coconut shell. All her foods looked so delicious being cooked on the wooden fire. In Trinidad, Chayote is called Christophene. It is technically a fruit, but is eaten as a vegetable. I've never had it in anchar before... it looked real tasty. I can totally see the Trini influence in Sandy's style of cooking, especially the ingredients and execution of the curry goat. This spread is a curry lover's dream! Hats off to Sandy. She has a radiant personality and excellent cooking skills. I truly enjoyed this episode!

While making roti , when you put oil and than sprinkle flour before rolling becaus flour will ensure the layers are separated.

Sandy and her family are amazing. She has a unique and charming attitude and knows how to welcome her guest. Her hospitality skills are superb and she show cased her culture and ethnic origin in an extravagant way. My First encounter with a Guyanese was not pleasant at that home. However, as I encounter many after a while I have lead to the realization to erase that unpleasant experienced. Sandy welcoming of the guest is genuine and authentic.

In Barbados, the green fruit is called Christophene but some islands call it Chow Chow or Chayote. Breadfruit, Paw Paw (papaya), Dragon Fruit all tropical fruits. I love pepperpot! Hi David, I notice you mostly eat your chillies whole in your foods. The reason why whole chillies are put in food particularly in Africa, is because some people can't cope eating chillies in the family meanwhile some people can't live without. It will be good if you explained to the whole world. Even the Migration guy likes eating these chillies whole in his food on his channel. What you have to do with these chillies is mash them like a rough or smooth paste depending on how you like it with your fingers into your whole food in your plate to distribute the heat. It seems so many people in the world saw other people around the world put chillies in their food without knowing why and started just adding whole chillies in their foods also and people get frightened chewing them and run away from chilly all together, which is not fair. You use your fingers like a blender, mash the chilly, mix with your whole meal in your plate. Depending on your level of tolerance, you determine how much heat you can take and leave the rest at the corner. You have a large platform to demonstrate and explain it to the world. Chillies can always be dropped into any meal for people who are chilly eaters to enjoy their meals that way without inconveniencing others. I also noticed that people even put the chilly at the end of the meal which ends up not getting cooked. The intention of using these chillies earlier in foods is to infuse the foods with the aromas of these peppers without making the whole food hot. That's why they are dropped with the stems to avoid them opening up in the food. What can be done alternatively is for the chillies to be boiled separately in another pot and served on the side for those who want or like chillies. Also these chillies are dropped in the food and when they have infused their aroma and are ready, they can be removed from the food, put aside and served when the meals are ready and served on the table. I had to take this time to explain this on your channel because you travel a lot and are made to go through the torture of eating these whole chillies and nobody understanding the intended purposes of these chillies being put into foods in some countries. You can be an ambassador of spreading the word so that people stop torturing people who don't eat chillies by making them eat whole chillies which have so much concentration of heat. When the chilly is distributed in your whole meal or food in the plate, it distributes the heat hence making the food more comfortable and tolerable. Thank you David for showing us different foods in different countries. I really admire the level of your tolerance for foods from different continents because some people don't even like to try before refusing. Wishing you the best.
