I have to say that having done mass pastries like this before wearing gloves is rather difficult. With this large amount of dough being able to fill the dough is essential! It can tell you a good dough from bad. Normally I am not a fan of uncovered hands but here I understand, blessings!

Thanks for saying that bc had it been a different country, people would be crucifying them for not wearing gloves. Sometimes its not convenient wearing gloves while preparing food. As long as the hands are clean and there is limited cross contamination, its fine

It's perfectly fine. Wearing gloves and touch everything without washing them, like these people do with their bare hands, it's worst.
