I’m 100% italian and been cooking for going on 60 years. Did it all like my mom and grandma. But I have learned, from you, there are more ways to make the favorites. I’m sure mom and grandma wouldn’t mind.

To keep food containing onions or and garlic from tainting ice cubes when freezing put food that is solid wrapped in parchment then plastic wrap then wrap in foil then into freezer if it's not solid food AS LONG AS YOU PUT FOIL WRAPPED AROUND THE COVERED FOOD THE GARLIC AND ONION ODOR WILL BE NEUTRALIZED BY THE FOIL... JUST LIKE ONIONY OR GARLICKY HANDS FROM COOKING A MEAL WASH HANDS IN WARM WATER AND SOAP AND TOUCH THE FAUCET COMPLETELY WIPING FINGERS AND HANDS OVER THE METAL AS IF YOU ARE WASHING THE FAUCET.. THIS WILL INSTANTLY GET RID OF ONION AND GARLIC SMELL FROM HANDS...

I make mine almost exactly like yours, wet bread and all. I only do 2 things differently. I add fresh basil and use an onion/garlic combo. Otherwise, I’m ingredient for ingredient. I just LOVE your channel. Binging it right now!

when you grate the garlic you lose a lot to skin and heel and you do need to grate some and chop some for the right taste profile 😁

Been making the gravy (we call it sauce) and meatballs, almost just like yours, for decades but I learned a few things from you that I will do next time. I will season each can of tomatoes, add baking soda to the gravy to cut the acid and I will cook my meatballs in more oil. I’ve been frying them in too little oil. I also cook homemade Italian sausage before the meatballs and add both to the gravy. It’s how I was taught. The sausage flavors the meatballs and the sauce and vice versa. Some of my family likes the sausage, some the meatballs. I also use about nine cans of tomatoes and I freeze in batches for later. I chop some meatballs and sausage to make meat sauce for lasagna. It’s to die for. You must be the real deal cause a little old Italian lady taught me almost identical to what you do. Saving your videos and I will subscribe.

Hi Belle , we definitely love sausages , braciole and a good piece of pork .. but i usually portion this big pot out for storage and later use and will put my meet in them for a sunday dinner …. if you store it meat free you can use it for other recipes like vegetarian eggplant parmigiano or seafood recipes like red clam sauce …. i hope you enjoy all our family recipes 😊

Good recipe. I see a lot of people add onions to meatballs. In Italy, nobody adds onions to meatballs. Your recipe is more authentic Italian. Nice work.

Same here; watched, listened, learned; My Gram , From Calabria; made them will all beef, , "day old" hard crusty Italian bread, soaked in water; eggs, onions, parsley s&p,garlic ,breadcrumbs , grated pecorino, etc; LOTS of bread, I only realized later in life, was a way to make them "go further" when feeding a family. ( Calabria and even during the depression in NJersey, times were tough; ) The bread does make it taste superb,; Fried some meatballs( cast iron skillet) made others in the sauce.

Kenny, great meatball recipe. Almost identical to mine. I use dried bread crumbs that I hydrate with milk to add moisture to the meatball mixture. I also fry my meatballs in an olive oil/canola oil blend. The olive oil has the flavour and the canola oil takes the high heat. Bravo! 🇮🇹🇨🇦

I like the "hybrid" reference; I took in all the ways my family have made them over the years and I believe 😅 mine are the best too! 😅 Very similar to my process; I use 4C breadcrumbs (this brand is a must....it's the Brooklyn roots in my family 😅), heavier on the breadcrumbs and less on the wet bread, I put in a little milk, only use romano grated cheese, a little heavier on the parsley, and.......I throw in some pinoli nuts. And I only brown them in olive oil and then submerge them in sauce to continue cooking. The other week, I made several batches of lasagna and my non-Italian wife asked me why I made a batch of meatballs the day prior for the lasagna and not a "meatsauce" the day of when making the lasagna. I gave her the look 😕. I said I'm not making booster club lasagna! 🤣

Looks delicious. Just helped mom make meatballs this past Sunday. We don't use the wet bread and don't bother mixing the eggs. Mom always just broke em and plopped them in. They all mix in good anyway.

I will make this for sure. Well planned out recipe and I enjoyed it. I like to put a dusting of flour on mine before frying them and I recently started letting them steam in a metal colander over the sauce after frying just like my mother used to. Right out of the colander as a kid is how I ate them! Will combine these into a Stromboli for sure

I usually put them in for 30 to 45 minutes … I will time all my meats accordingly, so if I’m making braciole or putting pork in there those will go in first after being PNC and they will usually put those in for an hour to an hour and a half then if I’m putting in sausage that will go in for a half hour then at the end I will put in the meatballs for a half hour to 45 minutes until they are tender and then it’s ready

Hi Trent ...I’m happy to hear you enjoyed my family gravy recipe ....I usually buy the tri mix in my local supermarkets like stop and shop or market basket ...it’s by the ground beef section and will say meatball or meatloaf mix ...if you can’t find it as the meat department to grind you some veal and them buy equal parts of beef and pork ...hope you can find it

I found that forming your hand into a claw and mixing the ingredients keeps the meatballs from being dense.

I make mine almost just like yours, except I use milk on bakery italian bread without preservatives. I find the white bread gets too gummy. I try "shredding" it with a fork before I mix it in, makes it easier. Love the hybrid idea

Omgosh. Ok, so we eat out a lot. We cook A LOT ! My younger brother has eaten in many many fine restaurants across the USA. And he likes my cooking. He could not believe these meatballs. They were amazing. We cooked the leftovers on pizza the next day !!!! My only variation was I divided the bread crumbs in half(I used a little more because I skipped the bread) and soaked half the bread crumbs in milk until the consistency of the bread, so happy I found you on you tube

I freeze them after I fry them ...then to use , I will put them in the sauce/gravy frozen and heat them until desired tenderness

I just subscribed to your videos and can’t wait to make your meatballs. Just one question, though. Your video mentions you use Parmesan cheese, but your recipe mentions Parmesan and Pecorino Romano. I think the video would be correct, but as you mentioned in your video, this is a hybrid of the different family recipes.

Welcome ..I’m so glad you are enjoying my videos ...actually the written recipe is correct with the mix of Parmesan and pecorino Romano....I didn’t realize I left out the pecorino Romano in the video until the editing stage and it was too are to reshoot ...but they will be perfectly fine with just Parmesan if that’s all you have ....let me know if you have any other questions and how they come out ..enjoy !! 😁

That’s the way we were taught by my great grandmother from Avellino....I think the milk is a preference and/or different family recipe....I can tell you I’ve had meatballs where milk was used and I could not taste a different

I was taught that the less you work the meat the more tender the meatball? I don’t know if the recipe is different and then the preparation is different? When I first started cooking I found that the meat was dense and maybe even dry because of me overworking the meat. This goes for meatballs, hamburgers, Salisbury steaks, and meatloaf. Pretty much anything that you are using ground/minced meat. I also use the three types of ground meat for my meatballs (ground beef, pork, and veal).
