TOTAL SERVINGS: 3
PREP TIME: 30 min
COOK TIME: 24 hours (4 hrs smoking, 18 hr hold, 2 hr searing and setting sauce)
INGREDIENTS:
1 rack of pork ribs
Your favorite rub (I used Oklahoma Joe’s KC Style Rub)
Your favorite sauce
1 cup clarified butter/ghee or regular butter
½ cup Bacon Up, lard or bacon fat
THE COOK (around 24 hours)
Remove membrane and rub ribs
Light smoker and preheat to 225 degrees
Smoke ribs for ~4 hours or until they reach 145-150 internal and the bark is set
Double-wrap ribs in foil with clarified butter and Bacon Up (or bacon grease)
Hold ribs at 150 degrees for 18-24 hours.
A few hours before lunch or dinner the next day, preheat griddle or heavy pan on stove
Slice rack into individual ribs
Prepare surface of griddle or pan with Bacon Up, lard, or bacon grease
Sear/griddle individual ribs for 10 seconds per side on all sides or until the surface bubbles and develops a grilled meat/ “bacon” texture and smell
Sauce ribs all over and smoke for an additional hour at 225 or until the sauce tacks up
Serve ribs hot

Those all look great. Pretty crazy test and a lot of work for those individual ribs. I think I’ll stick with my Texas style spare ribs, but these do look amazing.

This is one your most significant comparison videos. I had been grilling smoked rib tips pieces in commercial setting, they work great. However, it has never occurred to me searing them over the griddle. Deep frying is not bad but it robs from the smoke flavor. I can't wait but to try your griddle method from A to Z.

Seeing charcoal in the cook chamber just makes me sad. I usually do my searing directly in the firebox. My cast iron skillet fits pretty perfectly on top of the charcoal basket, and grill grates fit nicely in there as well.
