Everything on the pair that I found today is exactly like the real ones you're showing except the Jumpman on the bottom of the shoe is black instead of blue. But everything else matches up to a t. Why would that be? Do you think they're fake or did they have some pairs with a Black Jumpman on the bottom?

Maybe you got a poor quality fake? The printing you point out on the fakes - it’s just a lousy fake. I would imagine that if somebody is going to profit from this and pay so much attention to structure and material, the easiest parts to replicate are the logos and printed portions (not the build quality). That should be the first thing you address, assuming you are building a fake.
