Sous Vide Everything You measure wrong. If you going to measure the energy or the efficiency of them to see which one will cost most to run, you must measure the KW/h, it's the measurement for engery. Watts measure only the effect. so in that case the one with more effect with more watt is likely better then the ones with less because it will likely heat up the bath of water faster. Energy and effect is not the same. watt and watt hour is not the same. You should test with a energy meter that measure KW/h and test everyone how much KW/h every cooker takes to finish to warm up a bath from cold to set temperature, and that one with the least KW/h will be the most energy efficient.

Hey guys, again a very good video, I like your channel very much and normaly I just enjoy the end when Ninja is tasting what ever your cooking. But this time I have to write you a "short" comment on your video. I have thought about some improvements of your tests in this video. Beginning with the Sous Vide Supreme, how long would it take to heat the 3 gallons of water like you did with the ciculators? You measured the peakpower and ranked the more powerful worse, IMHO more peak-power is better, because you are reaching target temperature faster. Interesting for me would be the idle power consumption, when the device is plugged in but turned off. And / or the total powerconsumption to heat 3 gallons of water.

for kw/h just divide his numbers by 1000 to get KiloWatts then multiply by however many hours you want to run it as you will use the number over 1000 every hour. As a side note the unit he has does measure KW/Hr but he has it in watts mode because they are basically the same. Typically people care about watts to measure it against appliances they would normally use such as an oven or microwave where they would normally cook that are typically given to the consumer in Watts not KW/Hr.

Jared Parks he stated for some people are interested in power consumption, in other words how much it will cost to cook and which is the least expensive to run, in other words how much energy it will consume. It not the same ass Watts. He numbered them Wich 1 was "the best" and it had least Watts, in other words least effect. And that is likely to be the worst, not the best because it will take longer time to warm up the bath of water if the effect (watt) is low. But that is effect and not in the same category as engery consumption. And also you referring that you can just take this and divide it with 1000 and it will be in KW/h for an hour of use is wrong. If the effect (wattage) was consistent over eternity of time you could calculate the way you do it because it will always consume for example 1000 watt every second of the effect is 1000w. But this is not the case here, the start at lower wattage as in the video and may dip and peak over a number of times, and also most importantly when the bath is up to set temperature the heater element will be turned off by the thermostat, and then no energy will the heater consume to transfer electric energy to thermal energy to warm up the water. So then as in the video after about 20 minutes it will turn off the heating element and consume slot less electricity. so you can't just by simply convert it to KW and count hours. Much more must be in the equation. It's easiest to use a energy meter to measure the KW/h for a whole cooking period, from cold water to finish cooked meat. for example test and measure them for maybe 3 hours under use. So sorry your also wrong, but the more you learn. About the microwave thing you mentioned. Yes it is more popular to consumers to talk about the effect (wattage) then the energy on microwaves, maybe sous vide cookers too. But that is for the effect, in other words the peak power to cook something, the more power/watt a microwave have the faster it will cook the food. But it doesn't mean it will consume the most energy. It will cook faster then a less powerful microwave and there if it was in the paper be more or less electricity consumption. But many things can interact like efficiency, isolation and ambient temperature etc. you want that optimized sweet spot that don't use more energy but has the most effect to in this case cook the food. They should do both effect and energy (W and KW/h) measurement because they are not the same, one is not more wrongly to measure, they are both handy to know if you are interested or comparing something. But what they said and wanted to find out was the energy, the cost to run and operate. So they should then measure KW/h instead of Watts. I hope I explained it clear so you can understand. Thanks

Also I can say that it will not be much difference in energy consumption. It takes 1 calorie per gram of water per degree °C to heat up. You can convert that to 4.186 joule/gram °C. It's simple as that. If you use the same container and amount of water you will not see any difference a monthly electric bill. Not for only cookers. For your main hot water system, yes. But not for a small container of water. It will be same because all use an electric heater with pump and controller, The heat takes the most energy, To heat up water it takes 1 calorie per gram of water per degree Celsius. (4.186 J/g °C) It will be same for every cooker and the only thing that will difference a small amount is the efficiency. But it is so small in something small like a cooker so it will probably be on the heating element +-5% only and that can also be in the same cooker with same model when comparing each other. and the pump will take so little effect that is will not also be noticeable on your bill. But what will make some difference, and probably a large difference is the heat loss. But that is a aspect for the container you cook in. If it have a lid and most importantly are isolated. Thanks S.V. Supreme will most likely have a much lower energy consumption for long cooking session that you may see a cheaper electric bill. depending on how much you use it. Because it is a closed container with some amount of isolation, looks like it have pretty good isolation. And bonus, no pump. So it would be interested if they tested only the Supreme or any similar against a traditional circulator. It would be more efficient and save some money maybe. Also you would see a difference in cooking quality and performance with isolation. More even temperature in the middle against the edges. more precise temperature all around. This will lead to more controller cooking and better meat steak. a bit faster heating and less evaporation of water with isolated lid. It would be also interested if you Sous Vide Everything saw this and use a isolated container to cook in. I use a hard plastic cooler with a circulator inside it with the lid closed. It is perfect and have good isolation. no evaporation and moisture in the kitchen air. The sound is muffled and gone too. Very even temperature in a big container. I am safe to cook for periods up to many days with this that it will be precise and no water will evaporate away. Long cooking times is more sensitive to temperature difference, so it make sense to use a isolated container for long cooking. short too in low temperatures. I hope you guys see this because the isolation is a huge important deal, and that is what makes the S.V. Supreme and similar better then circulators. But use a isolated container for it and it will be good as well. Less sound, less temp differences, more efficient. Please try it Sous Vide Everything!

Regarding the electricity-usage test, the largest power draw in any sous vide machine will be the heating coil. The Anova came in the lowest of all the immersion circulators precisely because it takes the longest to heat cold water to temperature -- it's turning less electricity into heat. The real electricity test would come in how much power the unit takes to maintain the water at temperature (with a lid on), since then the heating element will be on only part of the time and the unit's standby/processing power draw will take up a larger fraction of the total electricity usage.

this is exactly why I "help" the Anova by heating water in a tea kettle... dump it in and do it about 3 times. This gets my cook temp up in very short order and puts less stress on the Anova. Also, I use a styrofoam cooler with the lid (sized hole cut out for Anova) and it keeps water at temp with less effort from the Anova... plus water doesn't evap with lid on...

@Jake, I do exactly the same, including the styrofoam cooler with a hole cut out from the lid for the Anova - works very well, but the container I currently use is a bit large for my 800W anova to handle, so I can't fill it up completely, it's about 50l /11 gallons, filling it up to 30l / 6.5 gallon really is the limit. It's able to handle 24h cooks with no noticeable evaporation though :)

Artisan51 How are you heating the water in the yea kettle? If it's an electric pot, then watt per watt, it's going to be about the same. Natural gas probably costs about the same. Either way, it costs to heat water, and I don't see significant cost savings, but totally agree on the potentially prolonged life of the circulater heater.

I've bought both Anova and Joule and I ended up keeping Anova. The reason is very simple: 1. The Anova device is the first and the original one, and it's cheaper than the Joule. 2. Joule has no display, if you have connection issues, or no spmartphone, you cannot cook 3. The Joule app only gives you 5 degree increments to control cooking temperature and no custom duration/temp adjustment, for example 4.2 hours cooking at 133.5F is not possible 4. The Anova has an adjustable ring to attach any given water container 5. The Anova Pro has an app (WiFi) and a built-in display

As to your #3, You can set a temperature manually by connecting to Joule, then tapping the orange “Start Joule” button at the bottom of the app, then setting the temp and time.

Great video, guys! As someone with an Anova and Joule, there’s a couple issues personal to me that make the Joule edge out Anova. The size of the Joule is huge in our hours. We don’t have a ton of counter space or storage. The Anova has to live in a cabinet under the sink. The Joule can fit in our utensil drawers with no issues. I also have an Amazon Echo. Both products offer voice control with the Echo, but Joule’s voice support is way ahead of Anova’s. Lastly, as someone who mostly does my souls vide cooking in a pasta pot (unless I’m doing something big and the cambro comes out), the magnetic base on the Joule is fantastic. And again, its smaller size means more room for food in the relatively narrow pot. I did buy the Big Clamo for my Joule, which is way more convenient when I need to clamp to a cambro or cooler than the vice like clamp of the Anova. Finally, I’m surprised at how much I end up using the Facebook Messenger integration with my Joule. Makes turning on the cooker before I leave work a breeze. But as you guys say, they both will heat water and cook amazing food! And like you, I greatly prefer the Joule app, but you can certainly use that app s a guide for the Anova (as I did for a while until I got my Joule). Great video and thanks so much for the channel!

For the circulation test you could've used a drop of food coloring to demonstrate how quickly and efficiently it moves water. For Empirical results you could set a timer to see how long it takes for the solution to become homogeneous.

Brad Lewis I went to so much troubles with this test that doing that would be the least I could have done... the worst one was heating up the water. I did 4 circulators 8 TIMES that means fresh water every single time that was the worst test for me. drove me crazy.

A good way to at least save some of the water is combine one round of the heat up test with the circulation food coloring test. Plus if you do it back to back with the video of the heat up test you won't have to move the camera timer rig. Efficiency!

I'm late to the party, but as a long time user I wanted to say there is an issue with the Anova. It's electronics aren't sealed against moisture. This means that condensation during a long cook can get in the vents at the back of the unit and short it out. It is the most common cause of failures in the Anova. In general I love my Anova, but this is an important issue to be aware of when deciding on a Sous Vide unit.

But also being able to run it manually is easy and nice to have on really long cooks(did a Boston butt for 48 hours). My phone would have been dead. Please keep the videos coming. I have the Joule and don't regret it at all. There are some items that were left out for the Joule that made it the best for me. One and most important is size. The Joule can easily fit in a small drawer so storing it is never an issue but you can also use a smaller pot versus the other which means the water will heat up quicker. The second is that the Joule is the only one to have a magnetic bottom, so you can use that versus the clip. Another benefit to the magnetic bottom is that you can place the corner of the FoodSaver bag under the Joule and it can hold the bag down and prevent it from floating. As far as the power consumption is concerned that is directly related to the max wattage of the unit which translates to quicker heating times. I would suspect that once they are all at the desired temperature, the difference should be minimal. That said all of these products are good so just take everything into consideration and choose what works best for you.

I agree with you 100% the magnetic thing is great but I never used it because of my container, and if I can be honest with you I never cooked on a pot. So that did not even cross my mind. I did talk about the size thought and that I tried to make it very clear. I also think the joule is great. It is not easy to pick one they are all great.

I completely agree (though as I have a Joule as well my opinion is probably skewed), but would add that for me a huge plus for the small factor is portability. We have a weekend home and taking the circulator specially for when you cook for family & friends is great, and the size makes it easy to cook in smaller (or any available) containers. I've even done steaks in a 3" depth pan with the magnetic foot holding it in the middle.

I love my Anova. I can turn it on from my phone at 330 from work, and my wife can toss the food in the water when she gets home and I have food ready for searing when I get home. For that reason alone, I would have to get a WiFi circulator. It uses the least power, which I didn't know until this video, but that sure makes me feel better as we leave it on for 2-3 days at a time for long cooks at least once a month. Overall, I'm very happy with our purchase... and these videos! Thank you Sous Vide Everything!

That actual power usage is around 0.18kWh per hour with a regular plastic container for a single steak. So 72 hour cook = 12.96kWh, which is around $1.56 for the US average. Figure probably a few bucks to cook something like a brisket.

First, great video. I like the way you guys do things. No hate, all info. Secondly, I own an ANOVA machine. It's fantastic and I would buy it again. The reason why I would recommend the ANOVA over the Sous Vide Supreme is because it is almost half the price, you can cook big items and the ANOVA can be put away in the corner of a cupboard. I have an Anova, and have been very pleased with it. The one thing I do like about the Joule is the magnetic base, which would allow it to stand upright in an enamel pot. But I'm perfectly happy with the Anova, and will stick with it. Excellent video, guys.

My son, the executive chef, bought the ANova with bluetooth only for his home. Mistake. He can't use the app and leave the house without it shutting off. After his hounding me to learn sous vide, I purchased the Joule because it had wi-fi and they had a special deal going. I don't care about the noise and the app is so helpful in getting whatever I'm cooking to the temperature I need for the result I want and the pictures are so helpful in choosing that. It's as you said. Features are what will be most important in selecting the device you want. I will say I agonized for almost a year to pick out my new gas stove. This device was about a third of what I spent on my stove (and I got an amazing deal on my stove) and I didn't think twice about it. We've had so many great meals using sous vide. Thanks for all your efforts in making this video. I know how much work you put into it for us. And please, don't stop now!

@Alexander Mason But, it would be nice to see how the machines are holding up after two years. Maybe the maintenance for one is more inconvenient than for the others. Maybe the Sous Vide Supreme gets less use because of it's smaller water capacity than the larger 3 gallon bucket that they use for the immersion circulators. Maybe they could buy some other brands and test them out to compare, now that there are more options. (Then they can do a giveaway since they don't need a dozen circulators. ;) ) So... Maybe a small waste of time... But, not a complete waste of time...

Agree, I've burned up a couple circulators with what i would consider very light use. First one the electronics gave out, cheapy from Sam's club. Second was a Joule that quit circulating after 2 years that I could probably count the amount of times I've used it on both hands.

I did that and haven't been able to stop cooking meat since. Every single thing I cooked has been perfect. Top round, flank steak, ribeye, pulled pork (I pre-smoked the butt using the makeshift smoker from another SVE video). Ribs are in the pot now. I simply cannot fail with this thing. Best thing ever invented. And I am set for work lunches and dinner for about a week. ;)

As someone that has the Sansaire since it was released, its been a wonderful machine, as we have been using it at least weekly.(At least a year) It is the best thing we have had for improving our ribs, well, other than Alton Brown's rub recipe. Once you start cooking this way, its addicting!

as far as wattage - wouldn't this only be an issue for heating water up to temp? Anova was slowest - because it is lowest rated in watts? For me, the time to heat up and to keep at temp is moot. I use a Styrofoam cooler... this means the unit uses less energy to keep the water at temp. I also use a tea kettle to super charge my heat up dramatically cutting down the time to get to temp. It is no trouble to fill a tea kettle turn it on and then when it boils dump it in. This means I can get up to temp in about 10 minutes or so. Once water is hot I don't think it matters what the wattage rating is on any of the units...

No, you guys did awesome. I just thought I'd chime in... all the tests seem relevant. I use an Anova and like it for many of the same reasons you listed. I just figured out a way to hack the slow heat up time. I like the clear cooking vessels (especially for your youtube vids) but I do like the energy and water conservation a styrofoam cooler provides. Maybe others will benefit from my suggestion. Keep up the good work! Also, I purchased 3 of Anova's new units that all can be linked together to have finish times sync up for different types of food... Rare steak, medium steak, veggies as an example - can't wait to test those out!

Agreed....their effort shows through every weekly episode. Very fun! ....adding to the minimum power consumption requirement, pouring/adding hot water from your tap is very energy efficient and it's usually around 120F (or higher) already. So temp comes up quickly and maintained effortlessly (hence less power required) with very little energy used other that what's already stored in your hot water tank. This minimizes the need to get a powerful heating/recir (high wattage) unit.

We've had exactly that Anova immersion circulator for two years and we really like it. Granted it's the first sous vide machine we've owned but we have no regrets. If anyone is interested in vacuum sealers, we have the Food Saver v4825 bag sealer and it's fantastic, as long as you have the space to store it. We had the bottom end Food Saver with the clip down lid first but we ruined the seal by storing it in the locked position (it even warns on the lid not to store it locked!).

I didn't understand the power consumption test. High wattage could mean a hotter element. Wattage would drop when the water was at temperature. The strength of the circulator motor is also a factor. The power consumption test was misleading and not helpful. Otherwise great work guys, love your work.

Thanks for this video. All of your vids are fun to watch. My original sous vide machine was a Sous Vide Supreme Demi. Worked great, until just after the one year warranty expired! After a year the internal tank developed a pretty significant leak resulting in water all over the counter top when I used it. All these devices may fail, but my point here is that the Sous Vide Supreme machines was $383 at the time i purchased it, and the Anova I replaced it with was $115; something new buyers may want to consider. American Express refunded me the $383 as part of their free extended warranty coverage for Amex card purchases, so no money lost. If you're buying an expensive machine and your credit card doesn't extend warranties, probably a good idea to buy some sort of extended warranty from your retailer...

Without a cover, the tub would also lose more heat, so the sous vide would use more electricity to keep the water warm. It is like trying to keep your house warm on a cold day with the door open...your furnace has to work harder to keep you warm.

I have a Sous Vide Supreme and have for about 4 years.....love it!! I may not recommend it to a new sous vide buyer due to the cost and the fact you can use wi-fi with the new ones....and can use your own pots, or cheap plastic containers. Not concerned with the sound,,,as most of us don't sleep in our kitchens. But....any sous vide is DEFINITELY worth the investment!

Matthew Bragg you would not have the precise control on temperature but it would work. I used to use a holding cabinet or an Alto-Shaam oven in the restaurant to do the same thing in the restaurant years ago.

@@fctuber Depends very much on the definition (or implementation) of the "temperature controller" I have modified a very cheap slow cooker with a PID controller and it works just as well as a store bought sous-vide cooker. You would absolutely want to include a circulator, or your bath will have a temperature gradient.

I already have a multicooker (Gourmia) that includes sous vide, and it's great for 1-2 people, but I need one that I can use with a larger container for family and friends. I got one of those. It's a copy of the anova machine and it it worked amazingly well for about 3 cooks and then I went to do some pork chops and it just said the water level was low and the temp read 40 degrees even in hot tap water which i know is 121 in my kitchen. Luckily i was still in the 30 day return window from amazon.

Apparently a lot of reviews had the same problem with the anova machine (which makes sense as they are the same design) and it's caused by steam going into the vents on the back of the machine right above the water level. Who designs an immersion circulator that isn't water resistant?

I have an Anova. It is very slow to heat up water but if I'm cooking Sous Vide speed isn't part of the equation. I kept eyeing the Joule thinking I made a mistake but after learning it only works with a phone I feel justified in picking the Anova. Good video guys and keep up the great work.

The Sous Vide Supreme seems like it would be the best one for most purposes you'd need in a normal house. I don't see why a smartphone app is necessary for any of these devices; all you need is an on/off switch, a temperature gauge and a timer, all of which can fit on the device itself.

We have had the Sous Vide Supreme for 5 years. We also have the smaller one too! Only problem may be the cost and not cooking something very large. Other than that it has been perfect keeping the temperature even for days. For a family it is perfect and we have impressed guest too with the best steaks ever including using tough meat in Mexico which came out tender after hours of cooking. That is my vote and will not change since the wife hates noises! Love this channel!! Tried everything with the Supreme and did need to reduce the size of certain cooks. Uses less energy too being so well insulated!

A Totally Ordinary Aubergine I'm not sure if I agree with that. The Sous Vide Supreme takes up a huge amount of counter space, more than most people living in condos, apartments, or smaller houses have. You can use the smaller ones with a stockpot if you needed to and store it above the range. The Sous Vide Supreme would take up 2/3 of my counter space. Great video, guys. Very useful.

Sous vide supreme owner here and I bloody love it. It does however take up a lot of space, however so does a huge container. I also like the fact that it's not a circulator. I think the rising warm water is better than trying to circulate it around a huge brisket for example. It is however quite a bit more to buy. If you want to do veggies and steak its impossible with one SVS. You can get at least two or three Anova each set to temp req'd. Thats damn useful.

I am new to Sous Vide Cuisine and I use Magic Mill 9 Qt Sous Vide Machine, looks similar to SousVide Supreme just slightly smaller and for that particular reason, it takes less space. Ideal for smaller families for a fraction of the price (I paid ~ $60 a few weeks ago), works just fine, no noise at all. I tried your Sous Vide RIBEYE Steak recipe on it last week, excellent! I also bought the Wancle Sous Vide Precision Cooker which I have not tried yet (I want to use it for larger meals only). Both machines did cost me less than $200. Just to let those intimidated by the price of the machines reviewed know that there are cheaper alternatives out there. Thanks a lot for the videos!

Great review guys and your team has made the correct assessment that it will be up the individual user to determine the features that are important for their cooking needs. For my needs, all I wanted was the lowest price point to get into SV cooking and manual functionality. None of that fancy stuff required for me, so forget about all those Bluetooth or WiFi features....more stuff to break and go wrong, so a basic model was good enough for me. Hence the CookTech basic model worked for me, since it's much like the ANOVA (but basic) and besides it has a life-time warranty. I did look at all the models you guys reviewed and each had it's positives and drawbacks; 1. SV Supreme - quiet, but really expensive (most expensive of all the SV equipment) 2. ANOVA - best features and flexibility, but their recent requirement to gather my log/privacy info was an issue 3. Joules - does the job, but like you guys said....it's noisy and no circulator and chewed up lots of power 4. Sansaire - same features as the rest, but kind of mid-priced to pricey range depending on where you purchase. 5. Precision Science - the one that started it all and built like a tank, but boy is it ever pricey for a circulator. Regardless of each equipment's pros and cons, they all do the same thing, and that's to heat/maintain low temp cooking over a prolong period of time and to make the best, most tender and flavorful cut of meat ever a la Sous Vide. And this they all do very, very well.

I was a few weeks late seeing this, but you guys did a good job. Especially so as your analysis confirmed my choice of buying the Anova last spring. For the videos, using a clear container is good, but I prefer using ice chests. The Anova hardly has to work to maintain the temperature and, depending on how you set them up, there is ZERO evaporation loss on long cooks. In addition, since you complained of having to empty the container, an ice chest has a drain you can use to fill up your bucket to empty OR handles to easily carry it. In your case, you could always modify your container by installing a spigot to empty it. Keep up the good work.

You guys rock! In the time it took me to watch the vid and read all the comments, you got 1000 more views. That should be a clue you guys are on the right track. We have the Joule. I like that we can take this with us in our pack when we go out of town and use minimal space in packing it. We like to cook some of our own meals when we are out of town so we don't have to eat out all the time. Sometimes we produce better meals than the restaurant offers us. I don't mind having to use my smart phone. It's always in my pocket anyway. In our family, the only ones who aren't carrying smart phones are the great grandparents. If I got a second unit I wouldn't mind getting the Anova. I think they are both great choices. You guys keep up the great work.

i recently (this past week) purchased the Anova w/o wifi and put your pulled pork recipe to the test. it came out fantastic. Juicy and flavorful, just to name a few comments i got from it. i didnt have time to let it set for 60 hrs like in your video, so i cut the meat in half as well as the time. it still was great. thx for the videos, instruction, commentary from ninja (lol) and all you do!

I made my first Sous vide ribeye. Used your method (garlic powder, salt pepper, thyme--fantastic. 3' steak 3 he cook for medium and it was amazing! Thanks guys.

Sous Vide Everything wow! I got s response from a KZbin star. Way to make my day. I'm looking for a good container like the plastic ones and lid for the joule but looks like all of the ones on Amazon are for the Anova. Which lid/container rack do you recommend

Bien le bonjour du Québec, I was offered the Anova for Christmas two years ago........ (Joule was not available in Canada)....... and I do have a SousVide Supreme....and a Demi SousVide...... You are spot on with your analysis. Really enjoy watching you guys! Salut!

The first sous vide tool I was aware of was Joule, but that isn't available in the UK. I got an Anova thinking I'd replace it with Joule when it became available, but the Anova is a great tool, does everything I might want and I can control it from anywhere. I'll be sticking with my Anova now. Thanks for the great videos guys. You even inspired me to track down somewhere I could get picanha! Not a common joint where I live.

I just got a Joule. I picked that one because I have a small kitchen and it seems to be easier to use in a 8qt pot. Plus it has a magnet bottom. I will be using it for the first time tonight.
