I love it, as is, as well... mom would often make it as a side dish to grilled foods, such as fish or pork steaks etc. If we were having grilled or fried fish, she also always made skorthalia... I use chicken stock and some cubed chicken, which is probably heretical, but it makes it into more of a main course.
