I was in Zanzibar in December and my favourite restaurant was Le Spice. I had the most amazing butter chicken and Garlic naan bread. Also Spice Palace. Both in Stone Town.

I was at Lukmaan in Zanzibar and indeed it was super good... but please domt hesitate to eat the streetfood. I was in Tanzania for 7 months and always ate street food and i never got sick 😊 it's super good! You have to give it a try!

I think it's a very good idea bcoz there is a few restaurants for Asian foods so the idea Will work great. I don't know about the formalities for foreigners to operate bsnss but you can come to explore the market and ask what needs to be done.
