Thanks a lot for for your appreciation. For an eggless version, in place of the eggs you'll have to add 1/2 cup condensed milk, reduce the sugar to just 130g (1/2 cup + 2 tbsp) and add some milk (if necessary)- just enough to get a soft dropping consistency.

Yes, Rita. I have never used coconut oil in any cake. But this oil is used in baking, particularly for vegan cakes. So go ahead and use the organic coconut oil for any cake, including my banana cake. But let me know how you like the taste.
