I'm a chef from Texas with a lifetime of home cooking and 6 years of professional experience - your technique and ingredients are all on point and I'm kinda impressed! Searing and not stirring the beef in the bacon fat, dry toasting your chili pieces, the juicy can of chipotle peppers.... If anyone is not from the US, this is definitely legit Texan no-bean chili and will taste like the authentic article. All your chilis are right too - Guajillo, Ancho, Pasilla, Chipotle.... Of course every family has it's own spin on things though! For me, the only other thing I would consider adding would be perhaps 1/2 T of dried Mexican Oregano. Or just to taste because oregano can be overpowering even with all the other spices you've used! It has a more herbal and kind of lemony flavor then other types of Oregano. But that's such a small personal nitpick haha, I was super pleased to see you even use Masa Harina!!!(Masa flour) Great work from one chef to another

Totally agree. I was shocked at how amazing this recipe was along with excellent timing and techniques. I've been making chili a long time and looked through tons of these videos, and this really is one of the best. Also, very good suggestion on the Mexican oregano. It really would take this already incredible recipe to that next level. I think 1 Tablespoon would be about right.

Thank you for this well-explained recipe. You have an international audience and not all viewers are from the US and have heard of all of the ingredients (I'm in England - where Lea & Perrins comes from!), and I appreciate how you explained it without skipping 'obvious' steps that are not obvious to those who haven't made a proper chilli. We can get most ingredients here now (compared to nearly 50 years ago - see below) - we can now source a number of various dried chilis (pasilla, ancho, and even canned Chipotle in Adabo sauce). My first ever chilli was nearly 50 years ago when a Californian family moved to the UK and stayed near us and their Mom cooked up this strange food called 'chili con carne' that we had never heard of (even now I remember my 8-year-old-self peering into the pan and being totally fascinated - for me it is obviously the chilli that all other chillis will be measured against - thanks Mrs Swindle of Roseville, CA.).

I tried this today, but used ground beef. Also I sauteed the onions and garlic in the fats from the bacon and beef before adding the meats back in. Only other difference was that the Kroger I went to didn't have all the dried chilis, so I was missing the guajillo chiles. Came out great though.

I was watching a cooking show and a guy came out with "authentic texas chili" and then i heard beans and was like nahh ima go watch someone make real texas chili. Guy was from Seattle so i knew it was gonna be wack.😂

This looks almost as good as my chili! I use cerveza, cilantro and lime and half beef, half chicken. I was born and raised in California where people make real chili, but now live in Idaho, where the locals think you put beans in (yuk)! There are no chili cookoffs within about six hours of here, but I"ll be moving to Mesa, Arizona in the spring!

That chili looks tasty and i bet its good since its been wining awards... but as a German chef....there is something i dont understand. Why add the Tomatoe paste so late into the already cooking chili if your adding diced Tomatos anyway? That does not make any sense because in these ragout tipe dishes, the tomatoe paste is not added to give it a tomatoe taste...its added at a specific time to get some real nice color and toastet/roast flavors. The diced tomatoes is whats added to give it a tomatoe taste. If you want to get everything out of your ingredients... you need to add the onions after the meat and bacon is frying in the pot... add the onions because you wanna try and get them caramelized cause thats what gives you lots of flavor. Now you wanna add your two tablespoons of tomatoe paste, steer it up, let it get some heat and color and then deglaze everything with a good splash of beef stock or water... now thats what gives you color and flavor... and then you add the diced Tomatoes and water or stock. Your giving away so much flavor with the way you cook that chili. It might be good, but it could still be better😅👌🏻🔥

That seems like the exact opposite wisdom we get taught. Tomato paste is specifically to enhance tomato flavor, nothing to do with color. Diced tomatoes are more for texture.

@@FortuitousOwl Well you can add Tomatoe Paste afterwards too if you wanna have a real tomatoe kick. But there is so much flavor lost the way this chili is made... Cooking is also a small part Science. With different types of ingridients and cooking methods you activate all kinds of flavors, smells and colors. Use those methods and your food will taste way better. Thats the difference between knowing how to cook and just learning recipes. Here in Germany we have to go through a 3 year aprenticeship to learn all these methods and learn how to realy cook and pass the writing and cooking test before your allowed to call yourself a real chef. There is a book called "the young chef" that every aprentice carries with him his entire life where it tells all those cooking methods and ways and why to use them and when. That book is like the bible of the chefs. It explains everything that has to do with cooking and serving. Maybe this book exists in English too.

@@connatser89 I’m just explaining the thinking behind the tomato paste. I believe that’s how Italians use it as well. The paste depends the flavor, it’s not for color. I genuinely think only someone that spent three years learning cooking science would be able to tell the difference or care about it. The types of people eating this type of Texas chili are not those types of people lol

@@FortuitousOwl The Italians use it either way. Its not actualy science... its just knowing how to cook and why use different methods for what. And its not important if the person eating it can tell how you cooked your dish... its more about wanting to get every bits of flavor out your ingridients to be able to serve the best possible food. It realy makes the diffenrence.... you should try it

Do you mean why the cook didn't caramelise the onions? I've never heard of deglasing onions - you can deglase the fond on the bottom of the pan? But putting the stock in & stirring would have helped do that. I don't know the official answer, but the normal recipe answer is you wouldn't bother caramelising onions if other elements of the recipe already brought sufficient sweetness to the recipe - and in this recipes case - toasting the dried chillies would probably be enough.

@@schubertuk I just made the dish and I sauteed the onions and garlic briefly in the beef/ bacon fat. The water released from the onions deglazed the pan. After that I threw the meat back in and continued the recipe the same way. It came out like the best chili I've ever had.

you can put whatever you want in chili.but Texas chili has no beans or tomatoes...its a different kind of chili if you use those...I like fresh tomatoes, lime and cilantro as a topping for my chili (not cooked)...I tried this recipe and it was missing something (probably a more complex spice mix) but still its a good preparation method to start from

@@gooser__43Chili didn't originally have tomatoes, so why not call this tomato soup? The original chili queens of San Antonio who came from Mexico always served chili con carne along with beans, so it was only natural to mix them together. Beans aren't a Midwestern addition like ignorant chili "purists" like to claim. A vast majority of people like you who complain about beans in chili simply don't like beans, but you rationalize your criticism by claiming that it's a matter of "authenticity."

You just earned another subscriber! I love this video. I've always wanted to make Texas Chili. One question though. If I use ground beef, would you still slow cook it for two hours? Thank you for the awesome recipe!

Hi CW41, thank you for the sub ❤️ I haven't made it this way yet, but if you're using all ground beef, you can shorten the cooking time since the beef won't need to cook until tender. I would recommend cooking for at least an hour, so the flavors can all develop and meld. Let me know what worked for you! 😊

i love this chili i grown up with fake german version of chili con carne with beans and corn wich i always hated. How can anyone only like floury overcooked beans? To hear a real Texas chili is without beans was an enlightenment.

I have all the ingredients except the chipotle peppers. Which i am unable to get on a short notice here in Norway. Can i use a bit of chipotle powder instead or should i just skip them ?

Can you cook this in the crock pot? I have an event in the evening and would like to prep this the night before then let it cook in the crock pot while I'm at work the next day for 8 hours. I'm not sure what I should prep the night before though and then place it in the fridge overnight for me to cook in the crock pot next day. Suggestions? 😄

Great question, Dawn! I haven't tried this one in the slow cooker yet, but I think it should be fine when cooked on low for 7 - 8 hours. Prep through the steps where you've made the chili mixture, cooked the bacon and seared the beef. The next day, add everything except the masa harina to the pot. If you feel the chili needs to be thickened after a day of cooking, add the masa and simmer for about 10 minutes. Let us know how it goes!

Looks good, I'd like to try it but my only concern is 2tbsp of cumin seems like too much IMO. Have someone tried this recipe that can confirm 2tbsp of cumin is fine?

Can you substitute the masa harina with something else like corn meal or flour? My store doesn't sell it.

Hi Alex, you could substitute with cornstarch, start with 2 teaspoons and mix with 2 teaspoons of water, then add to the chili to thicken. I haven't tried this before, if you'd like a thicker chili you may need to repeat. Thanks for watching, and enjoy!

I have found blending 3 fresh corn tortillas with a quarter cup of water or broth has been a great alternative. I even use tortilla chips one time out of desperation blended with water. It helped to thicken and gave that corn flavor.

My store doesn’t carry bulk masa harina either. I couldn’t see buying a 5LB bag of masa flour just for 3 tbsps, so I Googled a substitute. Potato starch worked just fine.

Hi Jessica! This recipe makes about 8 - 9 cups of chili. I haven't tried this recipe scaled up for a crowd that big, but there's 16 cups in one gallon, so about 2 batches of chili should get you about 1 gallon, maybe a little more. 😊

What is wrong with brittle chilis? Are they bitter? Do they have low flavor? I live in a small town so I only have dried chilis from Walmart.

Hi Outskirts of Infinity, they won't be bitter but the flavor will not be as strong. Sometimes you can give the chilis a squeeze in the plastic bags to see if they immediately crumble.

Don't listen to blaise. Ground meat will help the consistency a bit, but I would still add a couple of tablespoons of masa. It not only thickens, but also adds a subtle starchy component for flavor. Otherwise, you can wind up reducing your chili for several hours without it, which is not only a pain, but can actually start to muddle and dull your flavors after too long. Simmering longer is not always better as some claim; however, you do want to cook for at least an hour to bring your flavors together.

CASI and ICS allow tomato paste in their competition, just not chunks of tomato. Besides, is it more important to perfectly replicate chili exactly as it was in the 1800s or to eat food that tastes good? Good luck winning a local chili cookoff with 1800s chili that probably only had about five ingredients.

Yes! Instead of the bacon, add about 2 tablespoons of olive oil to the pan. Heat and saute the beef and continue on with the recipe. I hope you enjoy, and thank you for watching!

Yep that's a real chili recipe. You don't add green pepper to it (that's a sloppy Joe) and you use a real chili based sauce not tomato, you add tomato to it but it needs to have chili peppers as the base. Texas style, no beans. Chucks of meat means more of a Chili Colorado or Chili Rojas. The onions would be better if they cooked in the bacon fat to caramelize.

Be careful putting hot or cold stuff in the nutrabullet. They explode with extreme temperature changes, because your hold it to blend when it explodes it destroys people's hand and chest/belly...... Seriously I love the recapie but am in fear of you losing fingers cause the nutrabullet. Please look up videos of them exploding so you understand how dangerous they can be if you fill them with hot stuff.

No beans is supposed to be the criterion for Texas chili? (I’ve heard 100.) But tomatoes, cheese, sour cream, fritos, masa, and a dead goat can be thrown in, that’s OK? Although it DOES look pretty tasty….whatever it is.

Remember this is a good meat stew but not real chili. Real chili has beans in it and was invented by the aztecs, the reason why people say "real chili doesn't have beans in it" is because texans wanted to distance the dish from its Mexican origins and make it an "American classic"
