Dear Joel and Li - Today I am short of words and adjectives for this super fabulous Vlog . The restaurant is surrounded by a serene and wonderful place . I would immediately like to fly down with my family and friends to this beautiful restaurant 💯💯💯 Aunty’s cooking skills is par excellence. Uncle is also so humble and modest . They explained every dish and ingredients with passion ❤️❤️ The background music is also awesome 🎶🎶 That’s some delectable looking dishes on your table 😋😋 Literally farm-to-table dishes . Usually the Nam Prik is a tad liquidy- right ? This one is fried . There are so many variants to Nam Prik and other preparations of Thai food . Chilli 🌶️ cheers . The spicy pork fried dish is literally glistening and I did see Aunty crushing the garlic with the Ma-kwen in the mortar and pestle. Looks like that’s what has gone in the pork dish . The tomato , pork and veggie dish seems to be unique . The spicy Pork soup loaded with so many other ingredients seems to take the dish up by several notches in terms of taste , texture and flavour 👌👌👌 I am so happy for you and Li that you went to a place where you can Cycle , beautiful surrounding and mouth watering dishes . NICE! Best meal of the year! My wife watched this with me, she helped me figure a few things out; yes, those beans ARE known in Chiang Mia as "Pak Kee Hoot" (so, some kind of Thai "poop" name.) I've seen them growing wild near-by and call them "Wasabi Peas" since it's the same family of flavors. Never had gang made with them! Never been to a place with THAT many things, fresh from out back! INCLUDING the Khaow Niaw (sticky rice!) That freshness really makes a difference. Yeah, that "Fish Mint" is kind of hard to describe, I'd guess "soapy" comes to mind, almost medicinal. My wife HATES it and I love it! We have a batch growing out back with other Pak Laab. Such a great place there! Such nice atmosphere! No worries about hearing you chewing, the giant crickets drown all that out. Did they have the crickets on the menu too? All the locals here are out hunting those now, my wife even had me make cricket traps for her! 3 BHT a head from "auntie" down the road for them! Loved that you added a little casual conversation between you and Li, makes things even more welcoming.

Matt!!! Hey hey man! Actually, this restaurant is not too far from the noodle video I uploaded this week… I think the two places are walking distance from each other. I’m with you man - yeah, this is still one of my favorite meals of the entire year, this older couple man they could cook! but they also gave such a beautiful reception. And their house and restaurant set up is just incredible - a truly special place, I think I’m with you in thinking this is the only restaurant you would need to visit in Pua!!! Just keep going back each day 😂 until you’ve had the entire menu 👌🏼👌🏼👌🏼

I've eaten loads of issan laab but never northern Thai laab. Would love to taste the difference. It definitely looks less red from the chilli up north. Also doesn't look like any blood in it.

Well, tons of differences actually, you might say that aside from the way the meat is cut (which is what Laap means in the first place), actually almost none of the ingredients are the same. Its almost entirely different, which is GREAT then to have both!!
