And this pot, yeah the soup is super hot already so it stays hot for a long time (too hot for me usually, haha if its not on camera then I usually take that little alcohol burner out :) but yeah any dish served in this just looks so much cooler, and appetizing, it's a really cool pot - "Maw Fai" in Thai.

Beautiful place! I've heard older ex-pats say the Nan area is the most scenic place they've seen (in Thailand!) Nice, old school building, rice straw thatch roof and woven walls! Nice, old school noodle dish too! Couldn't ask for better!!

So these kinds of open hut restaurants beside the open road in the countryside.. How does the owner close up the hut down by the end of the day? I'm curious.. because it's widely open. What if there's robbery, vandalism or people randomly trying to live in it?

That's a great comment man, KouVang, I love it most because you can see in an instant how grateful I am for all these experiences, and everything I have been through - I make less than 10,000 USD a year man! And I do indeed "travel the world!" for many weeks each year!

About the safety, or robbery (lack of...), yes Thailand is definitely the most safe (in general) place that I have ever lived. Vandalism is only happening really in the big city, the capital of Thailand, but its rarely malicious (usually just artistic), and robbery does happen of course but not widespread. No, this shop probably doesn't even have a lock, and that would be the story with most restaurants/shops like this! The owner would take home the cooker I guess, and everything else would just stay in the shop.
