Koreans grow the tastiest veggies!!! I don’t know how, but when we lived in Korea I was fortunate to experience all their fresh produce!!! Carrots tasted like candy and the veggies were so much more bigger and brighter!!!!

I followed your recipe blow by blow and I did use cabbage as suggested and whole cardamom and was able to find thai basil and korean radish at my local Korean market. I couldn't find fried tofu anywhere including Amazon, so I fried my own. I also added wood ear mushroom (black fungus) to my bowl! It was the most delicious Asian dish I have ever devoured in my life! Better than any Asian restaraunt I have ever had! Same goes for my son's father and my mother who also says the same! I also bought all the ingredients for my mom showed her your video and walked her through making it all. I can't express how good all of this smells and this spices when you toast them! Everyone please if your able to, please go and make this don't just watch and comment. Then after you make it, come back and comment! 😁 I've seen others on here who's pho recipes like good, but this one spoke to me, and dang we had one heck of a conversation! 🍲

Vietnamese do not add soy sauce in pho.. like most of our soups we usually never add soy sauce, only fish sauce so I think I would have just used the Yondu only? that’s pretty much the only part that I wouldn’t agree with but to each it’s own! Other than that this is an amazing recipe!! Seriously. I clicked on this in hopes that you would use all the necessary spices and you did! So happy! I’m always disappointed when non-Vietnamese people post their “pho” recipes and they literally don’t add any of the necessary spices and they don’t char the onion/ginger lol that’s what makes pho stand out is the spices in the broth. so thumbs up times a million!! 👍🏼👏🏼 😭

i think adding soy sauce and fish sauce alternative makes the broth more umami and complex, some vegan fish sauce dont give the right amount of depth to the broth imo

Yep. Adding soy sauce also ready muddies/darkens the beautiful broth vs using fish sauce. As far as spices, she is probably using green cardamon, which isn't used in pho, we use black cardamom, which gives a more smoky and earthy aroma vs the floral one from green cardamom.

@@tuti1611 we also use mushroom seasoning which is a great alternative too if anyone is looking for more umami. Idk soy sauce is just a hard no for pho, period, as a Vietnamese person. I think most Vietnamese people can agree with me. Soy sauce ruins the flavor and doesn’t compliment the broth overall, that’s why we don’t use it.

My mum puts it into her pho broth (non vegan) and I'm always eating it with my pho because it absorbs all the flavour and gets soft, my mum says it's just for flavouring the broth but I say noooo I'll eat it 😁

Yum! I love that you did this recipe and then sat down and enjoyed it as well. How delicious is it??? So many fresh ingredients, I will be making it even though you said is was easier than non-Vegan Pho - it still looks like a lot of steps but once I make it a few times I plan on doing it like it's second nature. Love your little Bandit, he's so cute. What a gorgeous setting and that breeze through the door looks amazing. I lived on Oahu when I was younger, your Maui farm makes me homesick even though you are on a different island. I eat meat but my 2 best friends are vegetarian and vegan. One of them has been vegetarian with her family her entire life and they even have a Vietnamese vegan restaurant. I am Vietnamese so pho and broth noodle dishes have my love and to everyone’s surprise, I love her mums vegan pho on another whole level, completely different to the traditional recipes. I have not been able to replicate it and miss it all the time - I can’t wait to try this recipe!! Please explore other Vietnamese noodle/broth dishes too and put your vegetarian twist on them, I can’t wait to see what you come up with.

I love the care you take including so many ingredients and that’s why I’m so excited to make this as soon as we get home from Texas next week. Other videos I’ve watched show they also add garlic to the ginger. Does genuine pho not have any garlic in the soup broth ? I felt like you should called this Korean vegan pho with all the Korean ingredients in it. I know Korean people will love it and I am one of them. Love it! I’m going to make it. I probably throw in some veggies dumplings and Korean red pepper flakes as well to favor it. As for the seasoning, you guys can get a already made package seasoning at any Asian store that comes with the tea bag without having to scoop it out from the pot.

You literally have the best pho recipe I've seen to my liking! I want to practice making this, though I live in Pittsburgh PA and I'm sure some of these ingredients will have to be ordered on Amazon. I want my pho to be as authentic as possible and I love to go to the cultural source as best as possible. You made this look so fun and enjoyable to make and especially eat! Also you're so pretty! Chicken pho doesn't take 8+ hours of simmering. You can make a good chicken pho in about 1 1/2 to 2 hours. If you save the carcass and skin from rotisserie chicken, it'll be even faster, I bet. Just boil the bones for like an hour and then toss in all the aromatics and such and boil for another hour. That should make a great broth.
