Tofu seems to be a popular dish in veggie world. It is not only simple + inexpensive, but also full of protein which is good for health.

🤤 yummmm. Khmer roasted eggplant 🍆 dish is one of favorite from my mom. I still remember my mom’s recipe, so simple and healthy. Roasted to perfection and perfect chunks and consistency to my liking. Haven’t had it since I left home.

Welcome to Cambodia! However, you have not tested a vegetarian or vegan restaurant (the first I do not know at all, after 6 years as a vegan in cambodia and the second is not even vegan-friendly). In Phnom Penh there are 15 real vegetarian and 5 vegan restaurants, which are much, much better :)
