BEST WAY To Eat Spinach Mushroom & Potato Puré Casserole

Ingredients for spinach, mushroom, and potato puré casserole:
For the potato puré:
5 big potatoes
2-3 tbsp butter
1 cup or less whole milk
salt to taste
For the Spinach Mushroom Layer:
1 big onion
4 tbsp olive oil
500gr. spinach
300gr. mushrooms
salt, black pepper to taste
For the Bechamel Sauce:
3 tbsp olive oil or 2 tbsp butter
2 tbsp all-purpose flour
1+1/2 cup milk
dash of nutmeg
salt to taste
grated mozzarella or fresh kashar cheese for topping

michelle tack Soy/Almond or any other dairy substitute. I’m new to this...as my son who’s ASD, was just diagnosed with as Highly Sensitive to Dairy & Gluten. FYI, shredded & Flavored Tofu can be used in place of Cheese & Besan/Almond or Casava Flour can also be substituted.

That will be SO delicious! I really appreciate foreign cooking channels giving realistic measurements for oil. U.S. recipes always give some tiny, useless measurement like one tablespoon or less and anyone with much knowledge of cooking knows that is too little. I always use oil or butter in a workable amount, three or four times what is called for.
