Candied fruit, without toppings, is made to order. 48 hours tops. If they are covered, by something like a fruit roll up, maybe up to a week. (This is what I’ve learned from watching Miss Ro’s videos. )

I love your technique great I have been struggling with it staying on mines some off in a matter of hours I be having out to early before dipping but my question is after dipping pineapples how long to before putting them in the freezer for storage

After you’re done dipping your pineapples you should place them in the freezer you should have your packaging already set up and placed them in their packaging and placed them in the freezer now if you have a large quantity to dip you should dip in certain quantities where they won’t be out so long and you are have more control over the amount that you’re dipping it just makes sense to do with that way To keep The ones you have finish from breaking down

This is a great question and to be honest, I would not put candy fruits, such as pineapples or grapes, or any treat table because of the shelflife of each item these particular desserts are intended to be enjoyed within 24 to 48 hours these are not great for any treat table display. It will become a mess because as they sit out, it is humid and they will break down quicker than anything else on the table so my suggestion is to not put these on three tables. You can freeze them up until the customer picks them up but other than that I wouldn’t recommend putting them on a tree table.

everyone asking for pricing....you have to do your own home work and price according to your location....same goes for the "how do i store them after making them" climate is a big factor when in cones to candy ....someone in Florida with a hot humid climate would store them differently than someone who lives in Alaska with cold dry climate....weather is a big factor in candy making imo ....do your own test kitchen at home so you know the answer to these types of questions....good luck!! off to make some pineapples ....Thanks for all the awesome recipes Ro !!

Goodmorning. So what is the difference in keeping these frozen vs using frozen grapes to dip? In your grape video you stated the grapes coming to room temp the candy cracks. Will they happen also with the pineapple?

Yes they will. OK so the purpose for me doing these videos is to show every technique that can be done with some of these treats and desserts. Every fruit is different. And when you’re trying to achieve good results you have to do certain techniques to achieve those good results. So with Grapes they’re much smaller and when you freeze them and take them out to room temperature they tend to break down faster than pineapples, pineapples are much bigger than grapes. So if you take out frozen grapes and while you’re dipping them they’re going to come down to room temperature very fast and then they’re going to become soggy and by the time you finish Dipping, Grapes you may have some that’s already starting to break down because the grapes are trying to come down to room temperature and it’s breaking through the candy mixture so that’s why I stated I wouldn’t recommend to freeze the grapes before dipping even though some people do that but you don’t hear a lot of people talk about the after results. So with Pineapples you cannot dip them being soft because it’s too loose to dip in a candy mixture it will break away in the mix, so it needs to be firm in order to dip into a hot mixture like that. So like I stated different fruit have different results and requires different techniques. And as I said before all candy fruit does not last long I consider candy fruit to be a made to order treat! Does that make sense?

Hey great tutorial. Just have a few questions. After up dipped them the first time did you put it back in the freezer then dip the other side. I tried it but the undipped side was so soft and the juice from the pineapple messed up the candy mix. Also, the next morning all the candy was melted off the pineapples. I was a big mess. How do you prevent that from happening?

So in the video I showed how I dipped on one side and they dry immediately and once I got through my pineapples, then I go back and dip the other side but here’s the important piece of information that you need to know. They must be completely froze when you dip your pineapples and you must not leave them out too long when dipping the other side, so if you’re dipping a large quantity like 30 or more I wouldn’t recommend to do that mini unless you’re working really fast because the pineapple can get soft and then you’ll be running into an issue but you are a full mixture you can get 20 pineapples dip and that’s a total of 2 1/2 cans of pineapples but if they’re not completely froze, you’re gonna have a problem with dipping them in your candy mixture. After you dip, all your pineapples packaged them and place them in the freezer they’re good in the freezer for up to a week. Once you’re ready to serve them, you can take them out 10 to 15 minutes before time.

It sounds like you’re taking your pineapples out too early once you cook your mixture or while you’re making your mixture, your pineapple should still be in the freezer once that mixture is done and you add in your flavor or color and everything is mix then take out your pineapples And begin to dip them.

I do have another video on that information is in the hard candy grapes video when you have some time check that out but after I’m done, I placed my pineapples in a package and I store them in the freezer until the customer picks up their order. I don’t recommend that they sit in the freezer too long. I’m there only good to be in the freezer no longer than a week, but these particular desserts are really made to order because they will start breaking down if left out within 24 hours.
