Cool addition! I also recommend covering the deflector in foil. I do this with my BGE. It keeps it from getting all gunked up and adding acrid smoke from old cooks. It also makes for easy cleanup - just replace the foil.

That is a good idea, I have been flipping the heat deflector after each usage. And while it burns remnants, it doesn't completely clean it.

This item on Amazon is slightly over $100, I kinda think the Weber factory baskets or vortex type cones do a good job on wings and a one chimney’s fill of charcoal is more than enough fuel to cook all that poultry. I’m on the fence on this product but I’m glad you like it.

Just as a build and not trying to be funny you need to clean your cooking grate, old food residue was dropping on to the diffuser plate and you chicken was going black from the transfer, those particles are carcinogenic when burnt and not cleaned off

The main advantages are, 1 provides insulation so that you more efficiently burn fuel, 2 provides a more even cook, because the ceramic plates will absorb, and emit heat, and 3 there is a very large heat deflector, which allows you to use the entire cooking surface for indirect cooking. The disadvantages, 1 makes the the kettle very top heavy, have to be careful when moving it, 2. if you go over temp, the ceramics will absorb and emit the higher temp until they cool down, 3. this doesn't make the Weber kettle a kamado grill because it lacks the air seals and air flow control that most good kamado grills have.

I did a comparison of the Lavalock FireDial and the OnlyFire Ceramic charcoal basket with chicken legs and I had to pick the OnlyFire ceramic charcoal for taste overall. My only concern is that the ceramics are fragile (Had a side piece arrive broken.) I live in the far north and I will be doing a review of the ceramic basket when the temps drop to sub-zero again.

Not the same thing, but I put a small slumpblock brick [w/3 holes] on one end of my Smokey Joe 12.5'' grill. It makes an island so the steak is not directly over fire. If, later on, the meat needs a ''tan' you can always move it over the heat to crisp.

That great idea, so you create your own two zone cooking area. That is the downside of the large heat deflector if what you are cooking needs a "tan" you have to remove the heat deflector. But if you use the only fire cooking grate system with the half moon heat deflectors, then you can create a two zone cooking area. I love the "if it needs a tan".

@@idletimebbq You can keep the phrase, if you like it. The ceramic jacket is neat, but not worth $100 to me. To get two zone cooking out of my 22.5'' Kettle, I use the earlier Weber accessory fences. They clip into the lower grate and stand up. [They were later replaced by those tin half moons.] I put all the hot coals from the chimney behind the barrier and have a hot zone and a cool zone. Another trick for Legs and Thighs [Chicken Quarters] -- I have a top grill with hinges on bith sides -- each over a pocket made by the fences. I put large chunks of Mesquite charcoal backed up on each side to be lit off by hot coals. In the middle between the fences I have a long deep aluminum pan filled with water. This is the cool zone with hot zones on both sides. I light off one chimney with mesquite lumps -- after One Beer, it's usually flaming. Half the coals go down each open slot in the top grill. Eventually the other mesquite down there will ignite thru contact. The chicken quarters are placed on the cool strip over the water. The heat from both fires will create steam. After a time interval -- 7 minutes let's say -- I turn each quarter over to the right. The one all the way right comes back to the left. The chickens continue their march to Doneness. About two hours but I never timed it.

it does seem to even the temp out, the key just like in a kamado cooker is to not over shoot the desired temp, because the ceramics will take longer to cool down.

Just bought and assembled this product in my Weber 22”. Other YT videos show enough room between the grill and top stone to insert a tin foil pan to catch drippings or to hold water etc. No way does mine have any room for a drip pan. Maybe 1/2” or less. The metal tabs have no adjustment for raising the grill 10:25 . What am I missing? Disappointed in that!

Can you use this together with the SNS style basket or is there an Onlyfire Kamado style charcoal basket that has a divider on it so you can add fuel in a basket that is about 1/3 of the whole cooling area?

That is a good question, I do see that OnlyFire has a 22" Kettle Basket which does have a divider. While I have not tried it, it looks like the dimensions would fit, since the top of their basket is 18.7" diameter and the bottom is 16.6" diameter, which is within the dimensions of the Ceramic kit.

Hi Thanks for watching. Unfortunately you have to remove the grill gate and the heat deflector, which is a pain when it is hot. If you put in enough charcoal though it might last. Also if you use the OnlyFire Grill Grate System, then you can either pull out a half moon and add or move your charcoal, or it makes it easier to remove that whole assembly to get access to charcoal. Not ideal.

Anytime I get something new for my Weber kettle I'm going to let it burn off at really high temperature for at least a good hour especially something like this ceramic fire brick. I wouldn't want the ceramic to give off a chemical taste from the product it needs to be burned off for at least an hour before you try to cook on it. He may have done that but it didn't show it in the video. You want to burn off any chemicals from the manufacturing of it. Even metal grates can have a oily residue. Another thing I think you need to invest in is a cast iron or heavy stainless steel charcoal grate. The factory grate is warped. All of them get like this. I don't know why Weber gives you the real nice thick stainless steel top cooking grate with hinged sides and a removable centre, but gives a cheap thin flimsy chrome plated steel charcoal grate which warps and rust after the very first time you use it. It should be a nice thick stainless steel grate like the top grate, especially when you buy the Master Touch Kettle Grill or even more expensive models. Personally I think every Weber kettle should come with those thick nice stainless steel grates both top and bottom with the hinge sides and the removable center. You really need extra thick metal when you're going to leave flaming red hot charcoals on it. The flimsy piece of shit chrome-plated thing that rust and warped the first time you use it does not do a Weber Justice. You paid $15 for an american-made product and you get that crap great for the charcoal. This is ridiculous!!

I was not familiar with a rec-teq bulls eye, it looks cool. I would think that it would fit, but only concern would be the angle on the bottom part of the kettle, and if the ceramic kit would fit. The bottom diameter of the kit is 17" and the top diameter is 20.5", and the height is 5.7". Hope that helps. If you get one let me know if it fits.

In my mind they are two different things, the Slow and Sear is really good for having a hot section and an indirect section. Where this when using the included heat deflector gives you a very large indirect section, so for example if you where cooking a full packer brisket, you would have the space. I also think that the Ceramics add a little insulation which does improve overall temperature consistency and Charcoal fuel efficiency, but I don't have any specific results to point to.

I think the ceramics being below the grate level only defeats the purpose a bit. How does this work with a low and slow cook like brisket? Do you notice any increased efficiency over say the snake method? Interesting accessory but more data is needed imo.

A good question. I think that you could still use the snake method, or use this like a kamado grill (at least for burning charcoal). A benefit is that you can more directly control the fire temp, because the ceramics soak in the heat to provide a more even cook, and with large heat deflector, you have a large indirect surface.

Sadly, some of the viewing public have ZERO idea about some tools essential for SAFE cooking. Specifically the THERMO-Probe! Yes they are not all the same, some are slow to respond, others a very fast, but they are ALL Accurate to such a minute degree, it will make ZERO difference. When you have over-cooked it, you Sir, have overcooked it! I'm a Centigrade kinda chef, so i work on 65c as a bare minimum for Poultry to reach as a cooked temp, if that chicken has reached 85c+ its ME who messed it up! Allow meat to rest an you will see it rise in temp before it cools down. I do like the whole idea of the thermal mass provided by those ceramic inserts, and the ceramic deflector plate, it makes me think to make small Naan flat breads..... We have a national grilled chicken chain here in the UK, called Nandos, its a successful fast food business. One thing is does do to ensure every portion of chicken served is SAFE, is it steams or fully cooks and flash chills all chicken distributed to its outlets. Why do this you all ask? Well its to ensure the line cooks cant mess it up and under-cook the chicken, all they need to do is slip the chicken on the gas grills, brush with marinade ans ensure its got a nice color, check random pieces to see if they are safe and serve. It takes the skill out of the equation, takes the love and passion away, and gives you a dumbed down product. IMHO

Excellent accessory, horrible execution. 1. CLEAN THE GRILL. 2. SEASON YOUR FOOD LIKE YOU GIVE A CRAP; mixing bowl or plastic bag and mix properly to coat. 3. If you add extra charcoal, let the fresh charcoal release fumes for 10 minutes before adding food so it doesn’t taste like poison. Then, you will get more likes and subscribes. The vortex is great for wings, I still use the vortex, because it helps direct and focus the heat. This provides an extra layer of insulation and heat source, similar to a Kamado Grill. Plus with the large heat deflector you can cook bigger pieces of meat (ribs, pork butts, etc). Overall I do think that it helps conserve fuel, and make the grill more efficient.

It is true that Kamado will do a better job because of the all around ceramics. But if you don't have a Kamado or don't have any plans to purchase one then this product will improve your cooks, very inexpensively.

There are seals you can buy fo the weber. It is a good alternative for people who don't want to spend big bucks on a Kamado or add more grills to their backyard

Such a great vdeo! Now that you have done a few cooks with this, do you have any opinion about if it improves the efficiency of the kettle? Do you use less coals with it?
