It's so interesting to me how different countries can have such similarities in very specific dishes. There's a verrrry similar dish in Iran as well called "Sámánu" also made near nowruz or the persian new year. It has be stirred for more than 10 hours, and its made with almonds and wheat flour. I love how this channel shows how us as ppl can be different and yet have so much in common.

“sumalak” reminds me of an Indonesian/Malay sweet called “dodol”. it has the same brown colour, but it's dense like toffee and made out of coconut milk and palm sugar instead. the cooking process is also very similar, with the huge wok and constant stirring; it takes hours and so much labour. people here usually make dodol to celebrate Idul Fitri holiday. i think it's always interesting to find something similar from two different cultures.

We call that matamis na bao. We use brown sugar or coconut sugar for the sweetener. A special version I like has pili nuts in it.

That brings so many memories. I remember my uncle would put dodol in banana leaves and I'd eat them fresh. Very sweet and sticky, but the taste is so unique.

I'm not Uzbek, I'm Bonsian but those stirring ladies remind me of my grandma that lives back home in Bosnia, and I miss her very much. Please do a video in Bosnia! There's so much different foods and styles that you can literally go from town to town and the food will be completely different!

I was in Kazakhstan twice during college in a remote village and it was wonderful to see people so close, yet still so different village to village! The work ethic is true to what was seen here. As Uzbek guy i can add few facts about Sumalak. 1. People mostly cook that dishes in their houses if they have yard for sure. 2. You can buy that dish at supermarket (prices are pretty fair for that hard work) The next facts would be just my opinion and recommendations :) 1. Try to taste sumalak after holding it in refrigerator . It gets more thick and tasty 2. Try to find as thick sumalak as you can. Two notes about sumalak: (1) The growing seeds produce a set of enzymes (amylases) that can break starch into glucose. By leaving the pot over the night, they are giving time to the enzymes to work on the starches in the wheat flour and produce sugar = sweet. The exact same process is at work in producing beer, except, in beer making, there are yeasts converting the glucose into ethanol. The long boiling of sumalak has the added benefit of killing any organism that can spoil it and make alcohol or acid. Sumalak, like malt extract, is a great source of B vitamins. (2) Iranians have the same Nowruz desert, cooked very similarly, and only for the Nowruz. The only difference is it's not given away for free. It's sold. In Persian we call it Samanu ("a" sounding as the "a" in "hat").

Navruz or Norouz, meaning “ new day” is the celebration of the begining of the year and spring. This “ Persian in origin “ celebration is observed in many countries. It is not a harvest celebration.

This was so beautiful. Those ladies were so sweet and tough. It reminds of me the old school sugarshacks we have dotted around Quebec. Only instead of sprouting seeds, we tap maple trees; Rather than stirring a pot of starchy water into a creamy caramel, we boil the sap down to syrup... Newroz is a new year festival that originated in the Zagros mountains and nowadays as a Kurd who celebrated Newroz thousands of years ago for the 1st time, I am glad it has been celebrated by people far far away from Kurdistan and Zagros. Even that delicious dessert is called Semenu in Kurdish but it seems that one is all over the place and many people from different backgrounds also cook it. I love seeing people having common values. That deep color probably comes from caramelisation of the sugar of the grains. Sprouting the grains releases enzymes that help break down starch into sugars. It's well known within bread bakers or brewers. But sugar caramelises at temperatures above 100 degrees celsius, which is why most of it is probably caramelised at the bottom in direct contact with the pan. And slowly, as the water content decreases, the boiling temperature raises until more sugar can start to caramelise. Very cool to see!

When I first saw the wheat sprouts, I genuinely though they were making something similar to Coliva (a Romanian sweet dish that we give out at a burial or when we do a "pomana", which is a kind of remembrance of a deceased relative). And also, as a fun fact... it seems Romanian and Uzbek people have the same word for cauldron: Cazan :D

wow it almost like "Dodol" in Indonesia instead we using coconut milk and brown sugar because is typical sweet dessert that use for ceremony like wedding or else. but the cook is almost same it took a long time to mix and mix and shouldn't burnt inside until it more thicker than this. absolutely good dishes there and the people there.

We celebrate Nevruz in Turkey too but the tradition is about to die. Not many things happen on the day unfortunately. I remember we would light a big fire back in the day for jumping over it and making food so we can share with other people. .Unfortunately our central Asia traditions are dying quite fast.

Uzbeks are very chill people. I love them.They have a nice sense of humor,very laid back, balanced emotionally.Very comfortable to be around them. Very clean and have an amazing cuisine.
