Beth, this tart is not only delicious, it´s so beautiful as well! Perfect for your 4th of July Day. I love the three parts so much: The cookie dough, the pastry cream with this vanilla flavour and the fresh season fruit. Thanks for the tip about folding the dought edges over to make a double crust. +Joanne Goh Soft room temp is best for cookies :) That way it will combine better with your other ingredients. Same with eggs when baking :) Enjoy!

Probably have to let it cool in the fridge for a while to get it nice and solid before serving.

Dolly Perry Oh sure you can do mini tartelettes too! Best way to prevent it from falling apart is to refrigerate it for at least 2 hours before serving and then the custard will firm up and you will get nice clean slices :) Enjoy!

YAY! So glad to hear it! For this recipe, I think it really works best to do them separately, rather than doubling the recipe. That way you'll be assured accurate quantity of dough for each tin as well and pastry cream. And not over fill one and skimp the other etc. I know it's more work, but worth the effort for assured success! :) So glad it was a hit!

Cependant, dernièrement j'ai commencé à avoir une crème patissière qui n'est pas lisse (avec des petits croûtelles) une fois refroidie.. Je trouve ça étrange! Pourtant, je passe toujours la crème patissière au tamis avant de lui faire continuer sa cuisson dans la casserole, exactement comme vous faites! Merci beaucoup ♡

The metric measurements for the pastry cream are wrong. They're both supposed to be 1/3 cup but it's written as 65 and 45 grams for the sugar and the corn starch. My measuring cups say that 1/3 cup is 79 grams.
