I hope you love them. If you like your beans softer, increase the time a bit. Also, make sure the beans are done to your liking before you add in the rest of the ingredients because they don't really soften that much more.

I walked into our local second hand shop a few weeks ago and found myself staring at a brand-new unused Denby Gourmet Bean Pot. It was R50 which works out at about $3.30. Research told me they stopped making their Gourmet Range in 1975 which makes my pot vintage. I'm just waiting for the molasses to arrive at our local supermarket...

Hi Louise, another success thanks to your detailed explanation and great recipe! I had never tried salt pork before -- it was great in this (we took the half salt pork and half thick-cut bacon route). I mistakenly grabbed black-eyed peas instead of small white beans at the store, but rather than go back, I took a chance on the black-eyed peas along with the small red beans. Delicious! We can't stop sampling this, although I had intended to wait until tomorrow to eat some. Good thing it makes ten cups! Thank you so much.

Excellent! So, I didn’t make baked beans. But I had a bag of beans for bean soup, and followed these same steps and times for cooking beans. Perfect. I just didn’t know that little bag of beans, half onion and can of tomatoes would make enough soup to feed both armies at Antietam. My first time making beans. The pressure cooker is definitely the way to go. Thanks Louise! 🍲

Just got done with this recipe and it is the BEST EVER BAKED BEANS in a pressure cooker! I have the 10qt ninja and I only wanted to try a small recipe of these beans. So I cooked in a 4qt PC and I finished by baking in the oven. The only adjustment I made was about double the brown sugar (we are sugar-aholics) and I added a grainy mustard before baking. I have tried 3 times to make baked beans in a pot but it was just over complicated and not tasting great. Thank you because this was the easiest ever way to make baked beans! I look forward to when we will be able to get back to big family get togethers I will definitely make a BIG BATCH of these in my ninja! Great job!

Greetings from Tasmania. I got my NF a few days ago and I’ve watched a number of your excellent videos trying to decide which recipe to try first. And this is it - who doesn’t like baked beans? Thanks to your step-by-step instructions even I couldn’t go wrong and the results were great. The only change I would make to the next batch, would be to reduce the amount of sugar. I should have added it progressively and tasted, rather than dumping the whole lot in. It was a bit too sweet for y tastes, but in all other respects it was wonderful. Thanks so much. Now, which one to go with next? - David

The Salted Pepper - Good idea Louise, I’ll do that. One question. Why not red kidney beans? I couldn’t find red beans other than kidney beans at the store I went to, so I used only navy beans which was fine. But I do like the colour contrast of your dish.
@TheSaltedPepper
@TheSaltedPepper 4 жыл бұрын
You can use kidney beans for sure! I guess I was thinking about the texture, the color contrast, and the size being about the same. The red beans I used are a little firmer after cooking and I like that. I also think that them being similar in size is nice from a visual standpoint as well as a "mouth feel." I know that sounds weird, but having a very large bean, like a kidney bean, paired with a small navy bean might feel strange when you eat it. I'm weird like that and choose my ingredients based on a lot of factors. That doesn't mean they can't be changed with a great end result. Let me know if you use kidney beans, I'll be very interested in how it turns out! You may want to increase the cook time by 5 or 10 minutes.

Louise, I am a bean doctorer but for many years made baked beans from scratch and in the oven or my slow cooker. I would put a ham bone in from the start of cooking. Do you think a ham bone would work from the beginning of this recipe? Great recipe. I did have a couple of issues though. My beans were a bit tough even after 60 min under pressure and a full natural release. They were chewy and starchy . It could be the water i used. I used RO purified water. It is still very good but i am thinking that maybe, where i live i need to pc it for maybe 4 or 5 additional minutes? Also, for my family i will probably reduce the brown sugar by at least 1/4 cup. Still this recipe rocks!!! Thanks so much for the fresh taste of baked beans!!!

Hmmm... how old were your beans and what kind did you use? Did you PC longer and did they soften up. I’m curious if you used the jalapeño pepper. If you didn’t I can see the brown sugar being too much. Of course everyone likes various degrees of sweetness and I think I lean towards the sweet side quite a bit in my recipes.

@@TheSaltedPepper, hey there! No, I live in Florida. I bought the beans from my local Publix a day b4 i cooked them and yes i did use a jalapeno pepper. It's not that they were outright hard. They were just kind of chewy but good.. I used the beans u mentioned too. 1lb of navy's and 6 and a half oz of small red beans. I didn't continue pressure cooking them because i didn't notice it until i had added the remaining ingredients . Plus! talk about a "chef serving" like u talked about? I had to put the bowl in the sink to keep from eating the pot!!! Yes , my family will be allowed some today. lol I might just add a couple minutes of pc next time. The only thing i can think of that was different from your recipe is that i used the whole green pepper and it was more than a cup but i didn't want to waste the remaining 1/4 cup. so i threw it in too. @@nighthawk_predator1877 The extra green pepper wouldn't of affected anything. I might just like my beans a little more firm than you. @TheSaltedPepper
@TheSaltedPepper 5 жыл бұрын
I have not used Truvia baking blend brown sugar before. Do you know if it helps to thicken sauces? The brown sugar in this recipe is mostly for flavor and sweetness, so I think you will fine. I would start out with 1/4 of the amount and taste it before baking, then increase the amount until you get the desired sweetness in your beans. You may have to increase the bake time to thicken the beans, but I'm not positive on that. Please keep me posted, I'd love to include your substitution in my recipe post.

Hi! We recently got our first Ninja Foodie and we are in love with it! I Thank you so much for your beautiful videos. You are naturally good at explaining how to cook! I'm a fan of lima beans, so I decided to look for any of your videos where you cook beans and found this one. I have a couple of questions, please. How differently would lima beans be cooked in the Ninja Foodie? I typically brown the pork and add onions and other veggies just like you did at the beginning... for my lima beans I don't add anything at the end... so how could i cook them so that they are super tender? Also, I was looking at the Pressure Cooking Chart that came with the Ninja Foodie, and it says that for 1 lb of soaked beans, you do 6 cups of water and the cook time is around 3 min... in your video you ask to do 60 min... is there any difference? or is it because the beans have been soaked? Thank you so much in advance for your help.. I'm sure it will be very very useful! :3
@TheSaltedPepper
@TheSaltedPepper 4 жыл бұрын
Different beans cook differently, so there isn't a one size fits all kind of cooking time. Soaked beans will take a lot less time than unsoaked. I have only ever cooked baby lima beans in a pumpkin chili recipe and the time (unsoaked) was 20 minutes. Some said their beans needed another 10 minutes. I think 30 minutes is a good time for most unsoaked beans. The type of liquid they are cooking in also plays a role. If it is a very thin liquid, they will cook faster. I started off testing the baked bean recipe with a 30 minute time and they weren't even close to being cooked. 60 minutes ended up being the time this recipe needed, but it will vary. I would do a small batch of lima beans and start with 20-30 minutes if they are not soaked and increase the time until they are perfect, then you will have the perfect timing for you. Hope that helps some!

Absolutely! You can use the turkey bacon or even shredded cooked beef for flavor. I would add the liquid smoke very sparingly until you get the flavor you like. Also, a few people have said that their red beans did not soften up as much as they wanted, so before you add the other ingredients make sure the beans are the texture you like. It's harder to get them softer once the other ingredients are added in. You may have to PC another 5-10 minutes if you like the beans on the softer side. Or you can soak the red beans (the pinto beans aren't the issue) for an hour or so before making them. Let me know how they turn out!

I’m in the UK. When you say tomato sauce do you mean tomato ketchup or passata? I’m ready to go on this recipe and don’t want to make any mistakes! ☺️

tomato paste is a thick paste made from tomatoes. It's not a sauce or ketchup, but some people use ketchup instead.

It isn’t a canning recipe. My suggestion is to look at approved canning recipes because there are certain ph levels and processing times for safe canning.

Can you make this without the brown sugar or less brown sugar? My husband is diabetic.
@TheSaltedPepper
@TheSaltedPepper 5 жыл бұрын
Sherry King yes, you can. The brown sugar does help thicken the beans, but it’s mostly for sweetness. Just use as much as you want or before you add any, take some beans (with the tomato sauce & vinegar) out of the pot and try some alternative sweeteners that are more diabetic friendly.

My husband canned baked beans and salt will make beans hard in process. Beans do not absorb moisture. Try leaving out while cooking and add last thing.
@TheSaltedPepper
@TheSaltedPepper 5 жыл бұрын
Nancy Lee I’m a little confused about your comment. Are you saying to leave the salt out until after cooking the beans? Ive heard that, but have never had any issues. I wouldn’t think the salt would matter when there is already bacon in there, but I’ll give it a try next time I make it and see if it makes a difference.

Why not pressure cook with sugar and tomato sauce?
@TheSaltedPepper
@TheSaltedPepper 3 жыл бұрын
I've heard that the sugar can prevent the beans from cooking correctly and the tomato sauce is thicker and when combined with the sugar might trigger the water notice.

The amount of sugar took me by surprise. Is this really necessary?
@TheSaltedPepper
@TheSaltedPepper 5 жыл бұрын
Bartosz Schatton you can decrease the sugar, but this amount of sugar balances the heat from the jalapeño and the acid in the vinegar. I started out testing the recipe with less and this is the amount that made them perfectly balanced. I like sweet and spicy. If you don’t like things as sweet cut back on the brown sugar or omit it at first and add it in in small quantities until you get the flavor you like.
