There must be a reason coffee is roasted so dark, in comparison to Norway, for example. It cannot be coincidence it is always so dark? Personally, I adapt to the coffee wherever I am. I am addicted.. Interesting watch. Safe, happy travels 👍
@RidetheBean
@RidetheBean Жыл бұрын
Hehe yeah the reason is complex. Historically it was roasted that dark to camouflage the poor flavor of the poorly sorted coffee. Back in the 1500’s it was tricky to get coffee all the way from Africa and Yemen to Italy. And storing it on ships for weeks and months didn’t make it easier. So it was roasted dark because it removes the taste of rotten and bug eaten beans but still gives you the effect of caffeine. Today it is partly tradition and partly the quality of the water amongst some other things. In Scandinavia we have a high standard of living and we are willing to pay for the people on the farms to do more work to sort out the poor beans. This increases the quality. And the better the quality, the lighter you can roast and still make it taste good. In very high quality coffee you want to roast as light as possible because that preserves the unique and complex flavors in each coffee the best. The darker you go, the less detail you will be able to taste. In Italy they have a very strong tradition of very dark coffee and it is very difficult to change peoples minds. But there are more and more specialty shops popping up each year so it is changing even there 😁

I love history, motorbikes and coffee in that order. For a living though I'm a craft brewer & cider maker and those are also high on my list. I prefer french roasts over Italian , but I don't remember Italian coffee being so bad ?. Different yes , but so bad ?. I live in Herefordshire in the UK and we have an ancient history & tradition of cider making. Also another famous region of cider making is down in Somerset. Here in Herefordshire we think the cider they make down in Somerset is acidic Mousie cloudy swill & quite undrinkable. Millions of people like it though and they think the cider we make here in Herefordshire is weak watery and tasteless. It's not of course, but if you're used to that cloudy sludge they drink down in Somerset you would think the same. I know that regional diets play a role here & I suspect they do with coffee as well?. Might be interesting to investigate that ?.

Hehe yeah you are right about preference. People tend to like what they are accustomed to. But there is a difference between preference and quality. And when it comes to quality, the vast majority of coffee in Italy, and the world for that matter, is poor quality. You can have a good quality dark roast. That is not my preference, but like in this episode I could appreciate the coffee even if it was not my preference. But most people in Italy don’t know what good quality coffee tastes like, and they believe in their old myths about how coffee should be made. If you go into a traditional coffee bar in Italy you can be guaranteed that the machine is dirty. That is because they believe old, stale coffee makes the next one better. But that is like cooking a steak in a frying pan that has never been washed. The old fat from the steak you cooked 5 years ago doesn’t make a fresh juicy stale taste better 😅

Nice video! I'm glad you liked Turin, it's a place full of history and interesting things to see. Regarding the coffee, I'm not an expert and I don't consider myself a coffee lover, but you have to consider the context around it, for us Italians there's no other coffee than espresso, any other type of coffee is not an option (well maybe except the home made moka pot coffee). I think you had to search carefully to find those two places, and there are not many places like these, even in a big city like Turin. What you call espresso for us is simply "coffee", maybe we are used to it, and that's why it's our standard, in fact when we Italians travel in other countries we find the coffee terrible, so bland and watery, we call it "dishwasher water" 😂 We must also consider that you're not an average coffee consumer, you're way beyond the level of a coffee lover, you're a professional coffee sommelier. From the perspective of a regular person the espresso you can find in every Italian bar is a pretty good one 🙂
@steveh545

nice reply. I'm sure there's good and bad coffee, but the strength of the brew is likely a personal (or regional) preference. Depends on how you grew up. I'm in the southern US. We tend to drink stronger coffee than the midwest. We each hate the other's coffee. Having spent a lot of time in New Orleans, that's a different brew than most of the other southern States. My palate isn't super refined either, but i like what i like, and see-through coffee isn't my thing, lol.
@RidetheBean
@RidetheBean Жыл бұрын
Hehe yeah we come from very different perspectives 😛 However there is a difference between quality and preference. The quality of coffee in Italy is generally terrible from an objective POV. It is mostly cheap and poorly sorted beans. If you look at the beans you find in most bars closely you will see a lot of defects on the green beans. And most places in Italy uses a lot of robusta in their blends. This makes it taste even more bitter than necessary. But it does give a higher yield of caffeine per serving, and is what most Italians are used to drinking. But most Italians don’t care about the flavor. They care about the traditions and the cultural aspect. Plus I almost never see Italians clean their machines. I get told it is because they believe it makes it taste better, but that is like saying you should never wash your frying pan because the old, stale grease makes the fresh streak taste better 😅 In some places tho, the few who do take care of their equipment but still serve dark, Italian coffee, it still tastes good. Like the first shop in this video. I was pleasantly surprised because I expected a bitter and bad coffee, but they knew what they were doing and cared about the product. So even if it was way too dark for my preference it was a very good coffee. 😁

And as an old guy, I am just gonna smile a lot while watching this...your interest in coffee is amazing. I'm too easily distracted I guess... (was that subtle enough?) And another reason for a sidecar, a place you can lock up your stuff and not have to carry it around...

Always interesting how you taste your coffee and that you first look at the coffee machine. And ofcourse an interesting history lessons of modern classic architecture.
@RidetheBean
@RidetheBean Жыл бұрын
Hehe yeah the machine very often tell you how the coffee will taste 😛 If the machine is a la marzocco or Victoria Arduino the coffee will very likely taste good. You wouldn’t spend that kind of money if you don’t care about the flavors. And the vast majority of espresso machines, especially in Italy, are dirty. So the coffee will taste stale and gross even if it is good coffee.

When you say something like "I didn't expect decent coffee in Italy" are you referring to the full cup of Joe (the Americano), or do you also include Italian espresso in that criticism? And no true coffee afficionando's visit to Torino would be complete without a visit to the Museo Lavazza, which relates the history of that company and aspects about the development of coffee.
@RidetheBean
@RidetheBean Жыл бұрын
I refer to the objective quality of the coffee itself. There is a big difference between quality and preference. Quality is objective while preference is subjective. Lavazza is not good quality, but it is the preference of many people because of what they grew up with. So for me the lavazza museum is not as important as the la marzocco museum 😛
