Filling:
1 red onion
2 carrots
olive oil
1 red pepper
1 yellow pepper
170 g kidney beans (6 oz)
150 g corn (5¼ oz)
1 tsp sweet paprika
1/2 tsp smoked paprika
1/2 cumin
1 tsp salt
black pepper
1 tbsp soy sauce
100 g sour cream or a vegan alternative (⅓ cup + 2 tbsp)
150 g grated cheese or a vegan alternative (5¼ oz)
jalapeños
4-5 whole wheat tortillas
Bake: 200°C / 392°F 20 minutes on top/bottom heat
