What you had in your laksa...the "yong tau foo," I know from Cantonese cuisine. It's pronounced, "yern duwfoo" in Cantonese. It's basically meat stuffed into tofu. Usually seasoned pork...stuffed into a hollowed out square slab of tofu that's just deep enough to receive the meat. It's not eaten in soup but usually pan fried so that the tofu is browned. Sometimes...steamed. It's made at home; but, I've seen it much more often in restaurants. Particularly as a dim sum item. How it's served in Malaysia in laksa is ingenious, however. That curry broth must really complement the "yong tau foo" a lot. I've never had it myself; but, I can see that that's the case. And, you're right. Having both the egg noodles and the thin rice noodles together in the broth is the way to go. I have had that. And, I can attest to its magic.
