Besides kabocha squash, you can also use other pumpkin that are generically labeled “sugar pumpkins” or “pie pumpkins.” Here are some specific names for examples: Baby Pam, Autumn Gold, Peanut Pumpkin, Orange Smoothie, Ghost Rider, Jarrahdale Pumpkin, Long Pie Pumpkins, Dickinson Pumpkin, Red Kuri Squash, Buttercup Squash, Butternut squash, New England Pie Pumpkin, Lumina (which are white), Cinderella, and Fairy Tale.

I guess that basically means you can use any kind of pumpkin 😆 I prefer Butternut myself. It's easy to get in Australia. I think my Carbon Steel Wok is nicely seasoned now 😊

Mandy, because of you and your wonderful videos, we rarely order out for Chinese food any more! I took your recipe for stir-fry sauce and made it up in a big batch, and keep it in the fridge for even quicker meals. We don't use much fresh ginger, so I've started making pickled ginger when I buy a big piece. It keeps in the fridge almost forever, and I mince it up to use in cooking. It gives a nice warm flavor without being too strong. Thanks again, and congrats on your success.

I love kabocha and can see how it would create the visually appealing soup, but I do not think I’d like the flavors combined here. But I’ve never had a bad meal from any of your recipes, so I’ll give it a try. I do doctor prepared stock just as you’ve taught over the years - with scallion, ginger, garlic, cooking wine - and agree wholeheartedly that it elevates a convenience food to something delicious.

I can see it working. Normally when I make chinese wonton noodle soup, I use oyster sauce and sugar to give it some sweetness. In this case, it'll be the squash that gives sweetness.

It definitely works. The squash itself lends sweetness to a broth which is already very savory. Squash on its own does not really have a strong flavor anyway.

Thanks Mandy! Made this last night. It was fantastic. This was my first time using kabocha squash . It seemed hard to cut but it tasted fine. I also wrapped my wontons differently because they were round wrappers. Soup was fantastic my daughter literally said she liked it better than the take out version.

Ohhhhhh Yummie! Can't wait to try this! I hav your wok. Nice but several places are sticking. I think I cleaned it too much. It did stick a bit originally, thus my heavy cleaning. I now understand wok care and maintenance. If food sticks, once done, burn the food off, carbonatising thoese spots. Oil and burn again. Eventually all areas will become very canonized and nonstick. Potatoes or meat are great to coat sticky spots then burn them! Eggs are great for final seasoning test. Learning so much! You should update your wok preparation video for these tips. Very good to know. Thank you so much!✌😀👍💞

This was AWESOME, I just made this about an hour ago, I used Butternut Squash. I was wondering how my Wontons would hold up, they all stayed closed, it did notice I used store bought Wrappers there's a side that has flour on it and then you peel it into 2 wrappers...I found it best to stuff the NON Floured Side, the Wrapper tends to stick to itself better when you pinch it together.

Just made this for the first time and it's very tasty and fresh. Thanks for this and all the videos you are producing! One warning: this took me much longer than the 30 minutes the video mentions. Peeling and cooking squash, dicing garlic and ginger, peeling shrimp (I didn't have already peeled shrimp) took time. After all the prep it moves along in about 30 minutes. Worth the effort and the time for a lovely meal in a bowl

My go to recipe for wontons! I often double the recipe and freeze the wontons for later. Sometimes when i don’t have squash I just boil them in chicken stock with cilantro, ginger and scallions. I made it once with ground chicken but find that pork is more flavourful. Still awesome though :)

Love your channel & am obsessed with wonton soup. A question: if wontons are just squeezed shut, with no moisture to bind, won't they open while cooking? I've been doing the triangle/fold over/seal edges method but if the one shown here works, it sounds like a great timesaver.
