I tried half a recipe with potatoes starch instead of tapioca (since here it is impossible to find). I think my rice flour was actually the main problem as it was too coarse and when I made the noodles they broke down to finger long pieces. Still they were as good as gnocchi, they did not dissolve and they did squeeze so it was not a real waste (yes they were probably not right taste side but they were still good and I think the texture was on point). I say the problem was probably the rice because it never created a mixture like in the video, it tried to precipitate at the bottom so I'm quite sure it was the rice flour. I will try again if I will ever find a finer rice flour (here it is impossible to get glutinous rice flour)

Thanks for the information. How do I choose rice noodles when the package doesn't say how many millimeters wide it is? I prefer 1 millimeter for Pad Thai.
