9:24 if you want removable shelves in the smoke house, maybe build it like the inside of a bookshelf, with holes and movable pegs that shelves sit on. With that cauldron in the bottom, you might need a pulley system in the top to help move it in and out if needs be.

A really good store bought bacon, if you can find it, is Nueskes applewood smoked black pepper bacon. I got some and as soon as I started cooking, I wished my grandpa was still alive. He would have loved it. The smell in the house had you immediately thinking you were back in time, in a cabin. The taste reminded me of when I was a child.

Did a similar set up with a 55lb metal drum set off to side of similar size size smoke house. I had a center smoke stack in middle of roof with a control cap. Id open up the door to see the smoke moving up inside of the smoke house like a slow moving tornado. The smoke when it got over to the smoke house was colder than I thought it was going to be, but I was using alder wood, the choice of wood in Alaska for smoking salmon.

Idea -- For your racks, my grandfather used oven racks. He had giant hooks that held them level, away from the walls, and served as a way to store the racks.

That looks amazing! Maybe we can copy your design because I really want a good smokehouse. Now Daddy had a larger building with the fire in the middle and a bin of salt about the size of a bathtub to the side. I used my router on 1x12s and put them vertical on the walls in my living room and dining room to mimic the original without making or buying tongue and groove. I should have alternated 1x8s and 1x6s with them just like the old living room.

5:19 instead of caulking the cracks in the smoke house, I’m assuming with caulk, can you use mud ?maybe from the inside so it doesn’t stain the wood on the outside.

I think the clay will be in the spaces between the wood, not on the ground. Clay has been used to chink wooden structures since was, because it works.
