"Bharelo Rotlo" is a traditional Gujarati dish from India.
The dish is enjoyed for its rich taste and is often served with accompaniments like yogurt, pickles, or chutneys. It's a popular choice for a wholesome and satisfying meal, showcasing the culinary diversity within the state of Gujarat.
Here's a basic recipe for making Kathiyawadi-style Bharelo Rotlo. Keep in mind that this is a versatile dish, and you can adjust the ingredients and spices based on your preferences.
Ingredients:
For the Filling:
1 cup chopped fenugreek leaves ( Methi leaves )
1 cup chopped coriander leaves
1 cup chopped spring onion
1/2 cup chopped green garlic
1 tbsp green chilli paste
1 tbsp oil
1 tsp cumin seeds
1 tbsp sesame seeds
1 tsp turmeric powder
1 tbsp coriander powder
salt to taste
Ingredients:
For The Dough:
1 cup millet flour ( bajra flour )
1/4 cup wheat flour (optional)
salt to taste
In a large mixing bowl, combine the bajra flour, wheat flour and salt. Add water to form a smooth, pliable dough.
Prepare the Filling:
Heat oil in a pan over medium heat. Add cumin seeds, turmeric powder and hing, then add sesame seeds saute for few seconds, then add chopped onions and sauté for few minute.
Add green garlic, and chopped methi leaves ,sauté for another minute add coriander leaves,saute for few more minutes or until the raw smell disappears.
Add green chilli paste, salt to taste and coriander powder, Mix well and cook for 4-5 minutes until the flavors meld together.
Divide the dough into small sized balls. Take one ball, roll it in your hands, and then press it to make a small cup.
Place a spoonful of the prepared filling in the center and seal the edges, ensuring the stuffing is enclosed within the dough.
Rolling and Cooking:
Roll the stuffed dough ball into a flatbread, ensuring the stuffing is evenly distributed.
Cook the rolled flatbread on a hot griddle or tawa. Flip it when one side is partially cooked, and cook the other side until both sides have golden brown spots.
Serve hot with yogurt, pickles, chutney or sabji.
