Bharlela paneer description :
This paneer dish can be served as a snack or an appetiser! It is delicious and a monsoon favourite!
Ingredients:
Paneer
Boiled & mashed potatoes
Gram flour
Coriander
Corn flour
Green chillies
Ginger Garlic
Turmeric
Red chilli powder
Owa/ Carom seeds / Ajwain
Asafoetida
Salt
Method :
1. Coarsely ground 1 inch ginger, 4-5 garlic, 2 tbsp coriander and 2 green chillies.
2. Add 1 and 1/2 tbsp oil to a pan. Add a pinch of asafoetida, the ground mix, 1/4 tbsp salt and saute
3. Add 3 boiled mashed potatoes and mix well
4. Turn the flame off and set aside to cool
5. For the batter take 1 cup/bowl gram flour add 1/4 tbsp red chilli powder, 1/4 tbsp turmeric, 1 and 1/2 tbsp corn flour, 2 pinches of asafoetida, 2 pinches of carom seeds/ajwain/owa and add enough water to make the mix slightly runny.
6. Slice 200gms of paneer.
7. Heat 2 cups of oil in a deep dish
8. Add the mashed potato mix onto the paneer slices (when using gram flour to fry any food item add a tablespoon of hot oil to the gram flour mix. This makes the food crispier.)
9. Dip the paneer slices in the gram flour mix and cover on all sides
10. Gently drop the pieces in the oil and cook on both sides.
