Ingredients:
Chopped #bhindi - 1/2 kg
#oil for deep fry
#Peanuts - 1/2 cup
#Curry leaves - 2 sprigs
#Salt - 1/2 spn
Red #chilli powder - 1/2 spn
#Coriander powder - 1/2 spn
Procedure:
1) Take oil into a pan for deep frying and heat the oil till medium hot and add chopped bhindi-1/2 kg. Deep fry in medium to high hot oil. Fry till crisp and keep aside.
2) Into the same hot oil add Peanuts-1/2 cup and deep fry for 1 min on medium flame and shift them onto the bhindi fry.
3) Take curry leaves-2 sprigs and deep fry till color changes and add to the bhindi fry.
4) Add Salt-1/2 spn, red chilli powder-1/2 spn and Coriander powder-1/2 spn to the bhindi fry and mix well.
We can store this for 5 days in air tight container.
Tips:
- Take fresh Bhindi for this recipe.
- Chop them to half inch into equal pieces. Equal sizes pieces will be fried evenly.
- You can add even garam masala and roasted cashew nuts to the recipe.
- Store in air tight container for not soggy bhindi.
- I prepared this a day before planning to do sambar. My kids love to eat this with steamed rice directly.
