Chef RV Manabat

Biñan-style PORKSILOG
1 kg porkchops (or liempo)
1 tablespoon salt (or less. This will depend on the amount of water you’ll add
1 teaspoon black pepper, cracked
2 tablespoons vinegar (cane or white)
2 tablespoons pounded garlic, skin on
Enough water to cover the porkchop
• Combine all ingredients; bring to a simmer over medium fire for 20-30 minutes, or until pork is tender.
• Remove from the boiling liquid, let dry and cool a bit before frying.
TIPS:
• For a darker-colored porkchop, add a teaspoon of soy sauce to every kilo of pork.
• Choose medium-thick porkchops. The one we made easily turned tough because the slices were too thin. Madaling matusta.
• Do not over-fry the porkchops, as they will turn dry and tough.
• You can also use liempo, it’s more tender because of layers of fat.
• Enjoy this comfort food while freshly cooked.

@@richardromano912 I’m not referring to constructive criticism…criticisms are positive on how it is being delivered… it’s the skin that wraps the garlic clove that when fried can contribute to the flavor, not the first thin outer skin… try it with your adobo

I just tried this and it was a success! My American mother -in-law craved pork chops and asked me to make some. I never made pork chops and thankfully, I saw this. Oh, you are God-sent, Chef RV! God bless you. :)

I like how you explain everything so simply. Madaling maintindihan. I also like the fact na the ingredients you use are locally available and affordable. Tama ka, this pork chop recipe is so simple yet it brings out the natural taste of the pork! I love your kitchen too!☺️

Thansk heaps! Love the way you keep things simple and true to the tradition! I don't really watch cooking videos and shows anymore but I changed that because of you- the way you present even the simplest food but with flair and genuine honesty! You made me reminisce the good times when I was younger and savour my fond memories of my home town Binan. Love pork chops too and yes, we love Aling Tuding's and Atoy's..I alsp remember eating standing up inside the market when I was in high school after school sweating profusely but enjoying very tasty sotanghon soup with spring rolls dipped in sweet and sour sauce, I haven't forgotten the taste, my first time to eat standing up at the markets, what a life changing experience for me! Nothing beats it so far! Cheers from Tasmania, Australia!

Hi RV, frm 1976-80.. dyan ako sa Biñan napunta kasi dyan ako nag High School sa JZGMSAT... batch 80 ako graduate.. dyan kami kumakain dati sa San Antonio.... i remember yung sinangag is served sa oblong na plato & yung tubig is nakalagay sa aluminum jar na dripping in cold water & yung baso yung makakapal sha na glass.. hindi sha talaga nkksawa kasi simple yet napasarap nya talaga...
