Bibingkang Malagkit
This is a Filipino midday snack or an after meal dessert that is made of glutinous rice, coconut milk/cream, muscovado sugar and topped with coconut jam. This delicacy is the same with Biko. They are very similar in terms of ingredients and the way of cooking it. The only difference is you have to bake the Bibingkang Malagkit to make the top portion chewy.
Ingredients:
500g glutinous rice
2 cups water
3 cups gata
1 cup white sugar
1 tsp salt
Topping:
2 cups kakang gata
1 cup muscovado sugar(less if preferred)
1/2 cup brown sugar(less if preferred)
1/2 tsp salt
1/3 cup grated cheese(optional)
