@@fringestream990 If you watch it from the start the oil is fresh, new at the start. It's frying meat at high temperatures which makes the oil dark so it's probably a lot better than it looks.

He uses the same hand to make the patties, you'd assume that he washed before hand and to top it off, that's all he does, so the hand is basically clean by the 10th patty and the boiling oil surely helps fix that meat of any pathogens no? It being transfered into a newspaper is not a big deal, europe is used to that, people used newspaper to wrap food before in europe, especially during commie times, some newspaper wrap will just make you stronger, + paper is widely used everywhere as wraps. if you're too careful you'll end up getting a cold by just touching a door handle. Thing is, I've had worse shitties from mcdonalds and kfc over street made food.
