Hi there! This is a bit late, so i think you probably know this by know, but I personally wouldn’t recommend the costco salmon to turn into sashimi/sushi. Even when flash frozen (which makes it safe from parasites) the overall taste and texture wont be the same, as when you would get “sushi grade” salmon. Grocery store fish (from the seafood section) tends to have more tendons/veins and chewy bits that wouldn’t make for the best sashimi. I noticed in your most recent sushi vid, you got sashimi from Hmart (its a bit more expensive than costco but worth it!!!)
