Hi Mr Bharat, We stay in Bangalore but basically North Indians. I have been trying to prepare the authentic idli batter(soak dal, rice, methi seeds, grind, add salt and leave for fermentation). But neither directly fermented(overnight) nor yeast fermented(overnight) batter yielded very soft idlis. I steam idlis on high(not sure if this is wrong, after seeing ur video) and my idlis never have grainy textured surface, they are hard too. Could you please advise where I could be going wrong or a video on authentic idli batter would be great too.. This time I am going to try this recipe, but not sure if using baking powder is good(as u say it causes bitterness in taste, I suppose 2 tsp is the right quantity for good fluffy idlis like u have used but probably not so great for taste). Please correct me whr I might be going wrong. I have been trying and commenting on you videos, but haven't heard from you. But I really need your advise on this one. Please do reply.
